Go ahead and microwave the potatoes. But, while he's grilling the pork chops, lightly oil the skin of your potato, season it how you like, and toss it on the grill for a few minutes. He gets soft skins, you get crispy skins, and without having to heat up another appliance.
Quite welcome. I read that one online at one point. Now when we want potatoes and are grilling at the same time, I always use this method. Just be sure to turn them so that you don't burn them. You'll get cute little grill marks on your 'tater.
I braised a small hen with shallots, mushrooms and fresh parsley ..few simple seasonings. Instead of taters, I made cassava again.. and will make the lime infused "sauce" that goes over it. (It's lighter than gravy.. but still yummy.) I still haven't decided what the green part will be.. haha... fried cabbage or green beans or something. I may have to go scrounge up a medley of fresh edibles from the back garden..

I haven't posted here in awhile, so tonight' menu Was:
meatloaf
mashed potatoes
fried squash and green tomatoes (garden fresh)
wilted salad
cornbread
and sweet iced tea! I specified the ice tonight...had to keep refilling; anyone else sweltering?
Dessert was homemade Angelfood cake I worked a little on and wound up with a wonderful Strawberry shortcake (added pudding and kool-whip)
The Rev. brought in fresh cantelopes too.

We had chicken sandwiches and leftover lentil salad from yesterday. That was some good stuff! I found the recipe at Allrecipes and tweaked it a bit. Delish!
