Hey Grandpa, What's for Supper? Part 2

It is HOT here. Because of some unforseen financial issues, we have not been able to do much grocery shopping lately. So I am doing just quick small basic meals. I have been enjoying reading what you all have been cooking. DGD and I are making cookies this morning before it gets too hot. We are going to be cancelling our internet service here real soon, so I will most likely not post again until we hook it back up. Thank you all for your support and encouragement through the passings of my parents. The anniversary of my Dad's passing is in two weeks, it is going to be hard, then a week from that would have been my Mom's birthday, that will be very, very hard, since I still am having problems from time to time with my Mom's passing. I will keep reading until we shut down, but won't post. You all have helped me dearly, God Bless You All!

Hi Monica. I had been wondering where you were. I'm so sorry to hear that things have been tough for you guys. As if the deaths of your parents weren't already a challenge, now you have these other issues as well. I'm really, really sorry.

I know that you'll get through this by relying on the strength and love you have for one another. Your family here in the kitchen will keep you in our thoughts and prayers. Until the time comes when you can rejoin us, know that there will always be a place set for you at our table.

OK, those yummies sound yummy! Please share recipes!

It'll be B4D here. DS has a band rehearsal so it'll probably be fairly quick tonight.

Oh! Thank you for reminding me! DS is gone for the rest of the summer and DH just went back to work after having a 16 day vacation. So my schedule is all wacky!! I don't even know what day it is!!

OK so I decided on Sausage/onion/cheese Strata. I have some Little Caesars Churros in the freezer from a fund raiser. I think I will serve those with it. Thanks again BYB for reminding what day it was!!

Here are the recipes I promised.

Oreo Truffles
1 18oz package of Oreos(I used the store brand choc. sand. cookies)
1 8 oz package of cream cheese
1 package almond bark ( I used 2)

In food processor turn cookies to sand! Then add softened cream cheese. The recipe says to make a ball and roll each one in the bark. I use my bon-bon candy molds. That may be why I used more bark. They are divine!!

Peanut Butter Brownies
5 squares (1 ounce each) baking chocolate
2/3 cup margarine
1 3/4 cups sugar
2 tsp vanilla
3 eggs
1 cup flour
1/2 cup peanut butter

Heat oven to 350. Grease 9x9x2 pan. Melt chocolate and margarine over low heat. Set aside to cool slightly. Beat sugar, vanilla and eggs on high for 5 minutes. Beat in chocolate on slow speed. Beat in flour until mixed. Spread batter in pan. Warm peanut butter for 35 seconds in microwave. Then spoon the peanut butter in spoon fulls on top of batter. Bake for 40 minutes.

To make these extra yummy frost with chocolate frosting.
 
Tonight It's shrimp stir fry, with fresh snow peas, carrots, green peppers, onions, garlic, celery....served on a bed of white rice.... It's a ton of shrimp and snow peas!
