Hey Grandpa, What's for Supper? Part 2

last night we had chicken and dumpling stew.

I just had whole wheat rolls with pepper jack cheese, green leaf lettuce and sliced tomato's with Turkey Balongy sand. for dinner. Didn't feel like cooking. Today I will cook a pork loin roast out on the grill. I place an old roaster pan with water, liquid smoke and beer, (wine or water) I have even used apple juice under the roast, that is on a rack above it, I cook it at around 250 for 2 hours. the fumes and moisture get inside the roast, keeping it so moist and tasty. When you cut in to it, you will be so pleased. Baked potato, corn on the cob, swiss chard and corn bread, shall round off the meal. No room for Dessert.

You can freeze stuffed peppers with out cooking them. I put mine in food saver bags. Then when I am ready to cook them I add the tomato at that time. You can cook the whole thing first if you want. Just don't cook as long, so that they are not completely done. Good luck:fl

Have 1/2 of chicken in the crock pot with tomato basil sauce on it. Should be nice and tasty comfort meal since it has been cold and rainy here for last two days.

Let's see . . .

Monday - Spaghetti, salad, French bread
Tuesday - Veggie burgers on ww buns, fruit salad
Wednesday - B4D (6 grain hot cereal - perfect for a rainy night)
Tonight - Sour Cream Chicken over egg noodles, green beans, squash (I found one more on my plants!), salad.

With regard to your comment on expensive vanilla beans. Here is a site that a bunch of us BYCers ordered vanilla beans from to make our own extract. The beans are a lot cheaper than store bought and really good quality. Check it out you can get them for about $.70 a piece depending on the length and variety that you want.

Thanks for the vanilla bean site. I have been comparing prices so i can make vanilla extract for Christmas- too bad my Mom passed away this year, she would have LOVED to cook with it. I have been saving cool bottles all year.

Monday was spaghetti
Tuesday was stew and biscuits
Wednesday was chili with cornbread
Today will be hot dogs, homemade buns, leftover side dishes or mac'n'cheese


Yesterday I made a big batch of bran muffins-I make the batter then I can keep it in the fridge for a couple of months, taking out what I need when I need it. DH is happy; he's been waiting for these for three weeks!

Carne guisada (low fat), homemade flour tortillas, pinto beans (had some leftovers frozen), brown rice with tomatoes and green chilies.
