Hey Grandpa, What's for Supper? Part 2

I could only do that if I did it the night before... because at 8am NOTHING but coffee sounds good to me. The thought of food that early...

I do have a backup menu I use sometimes.. a whole month of meals planned out. I admire those of you that are so organized... someday maybe I will be too.

'Thrown together chili' thanks to all this chili talk lately & a sweet potato pie

I've never made either.. and of course don't have all the right ingredients for any recipe I can find SO I threw together the following:

2 cups tomato sauce, 2 cups chicken broth
1.25 pounds ground beef
a cup of fresh navy beans
some mixed veggies including fresh garlic
cumin, salt, pepper, onion powder etc
will boil slowly for the next 5-6 hours

I'll probably make some nice fluffy yeast rolls to go with it

Sweet potato pie...
I'm using a pumpkin pie recipe & a browned butter pie crust

7 bean soup tonight.

It's just little bits of different dried beans, not necessarily 7 but whatever I have... I think tonight there are 9 in there.
Total of 2 cups worth mixed dried beans
1/2 jar of dried beef, snipped into small pieces (sometimes it's leftover ham)
1 tbsp Better Than Bullion ($$ bullion in a jar, worth every penny), tonight it's the beef version because I'm out of the veggie bullion
1 tbsp fresh garlic
Water

Toss it all in the crock pot, cover with water, I have a small crock pot so I cover mine by 3 inches. Set on high for 6 to 7 hours. Serve with cornbread or yeast rolls or whatever you have..... Top with a few crumbles of queso fresco and I'm in heaven.
 
Chicken Corn Chowder... another throw together recipe I've never made... here's what I'm doing:
Half cook the chicken tenderloins in olive oil & garlic remove & reserve, then sautee onion in same pot in leftover liquid, add a couple of boullion cubes & couple of cups of water and about 3 cups of frozen corn... boil till soft then blend well. Cut up chicken a bit, add to pot, pour in blended mix, add a couple more cups of veggies; carrots, cauliflower, bell pepper and another cup of corn and a can of evaporated milk, some pepper and cook till yummy and add some pepper & freshly fried bacon

Next I'm going to make MY Italian Sausage Stoup... now THAT one I have done many times and is YUMMY & spicy but very good.

I have another sick kid here, probably piggie flu like two of us had a month ago. Round one hit two of us, so if this one is round two, I'm really in for it. You all know how husbands are when they get sick.

Thus, I'm keeping it easy. I have some ziti, spag sauce, and ricotta in the crockpot, and will muster up a salad and some garlic bread at the last minute.
