tonight we are having bbq ribs on the grill, baked beans, potato salad and dh wants hot dogs on the grill and lemon iced tea home made. YUM!!!!!!!!!!

Well, being that it's Cinco de Mayo and also B4D Wednesday, I'm going to have to find a way to marry those two. Right now I'm thinking something simple like scrambled eggs with salsa or green pepper. Not sure yet.

But . . .

Monday was homemade Minestrone soup with whopping big chunks of veggies and some garlic bread.
Tuesday was roasted chicken, brown basmati rice, and peas & carrots.

We cooked some tuna steaks on the smoker, made a seafood salad with scallops, shrimp,tomatoes, fresh spinach and onions from the garden over wheat pasta. When we sat down to eat Sharon and I both said at the same time........we need bread. lol some flat bread would have made it perfect.

Thursday was chicken fajitas, homemade (unfried) refried beans, and all the goodies including homemade guacamole. Those became leftovers for last night as well.

Today, wine and cheese with our neighbors.

BYB that sounds really yummy!

Hubby made Prime Rib and baked potatoes for myself and his Mom, Dad and our son yesterday, AND did all the dishes!!

He asked for a Quiche tonight so I will be doing B4D a little early this week
