Hey Grandpa, What's for Supper? Part 2

It's a traditional Irish American dinner, usually eaten by the rest of America around St. Paddy's Day. It's corned beef, cabbage, carrots and potatoes all boiled in a big pot with allspice berries, pepper corns, thyme, and rosemary leaves in a cheese cloth bag. It is meant to be fairly plain, but when enjoyed only once a year it's a welcomed treat!

I learned something new. I never knew that meal had a name. We always just called it "corn beef dinner". I'm getting some horseradish together, just for the occasion.

You double boil your corn beef?

Really? We love it and have it at the very least 4 times a year.

I was looking for something to make tonight....maybe no one is cooking since they are still full from corned beef and cabbage? HMMMM---just fed the very last of mine to the chickens tonight! no idea what we are eating though! Terri O

we had a big salad with hard boiled eggs, greens, turkey and ham, peapods, veggies, cheese, and pine nuts. And strawberries. And a touch of sesame oil. Best of all, my daughter
made it! It was great.
