My husband and I are still friends and laugh everyday. I think that is the secret to a long marriage. Laughter.(And dogs. Gotta have a few of those) But we only have 30 years in. The next twenty might be the most difficult.
What's your secret?
I think it was taking over the cooking. Do you do the shopping too? because I think that would be the glue that holds it all together.
Except my husband would only buy beer chips and salsa. We would die of malnutrition.
Actually not dieing is a big part of a long marriage. I better keep doing the shopping.

Key to a long marriage on my part : Yes dear. You're right dear. I'm sorry dear. The secret - laughter, and liking is key. I do NOT shop.

Tonight was half price pasta. I had angel hair with broccoli, and the Princess had angel hair marinara - there was enough 'take home' left for 2 lunches for each of us.

I have a lot of leftover grilled chicken breasts. I have been feeding a neighbor dinner for the last few weeks and I feel badly serving her leftovers that look like leftovers.
Ideas?

This is an easy recipe that is fabulous! (might work with pre-cooked chicken breasts...not sure)

4 to 6 boneless chicken breasts 1 c. mayonnaise 1/2 c. Dijon mustard 1/2 stick butter, melted 1 pkg. Herb Pepperidge Farm (or other brand) stuffing mix

Mix together mayonnaise and mustard; dip washed chicken breast into the mustard mixture then roll in the stuffing mix. Put the melted butter into the dish that you are going to bake your chicken and place coated chicken breast in this dish. Bake at 350 degrees for approximately 45 minutes. You may have some mustard mixture left. Save to use at another time. Don't pour all of the stuffing mix out at one time to coat chicken. It might not stick well. Use just enough to coat a piece at a time.

Chicken Spinach Quiche

Ingredients: 1 unbaked 9" pastry shell, 1 cup chopped cooked chicken, 1 cup shredded Swiss cheese (can substitute cheddar or gruyere) 1 pkg. (10 oz) frozen chopped spinach, cooked, well, drained ( 1/2 cup), 1/4 cup finely chopped onion, 2 eggs, lightly beaten, 3/4 cup mayonnaise, 3/4 cup milk, 1/2 tsp. dried basil leaves (or freshly chopped), 1/8 tsp. pepper

Instructions: Pierce pastry shell thoroughly with fork and bake in 375° F oven 10 minutes; remove. In large bowl, toss together chicken, cheese, spinach and onion; spoon into pastry shell. In small bowl, stir together eggs, real mayonnaise, milk, basil and pepper until smooth. Pour over chicken mixture. Bake in 350° F oven 40 minutes or until golden and knife inserted in center comes out clean. Makes 6 to 8 servings

YES! thank you. My brain is becoming solid rock lately. I really just want to make tomato soup and chicken sandwiches, but I know that isn't company fair.
Besides, I make my own bread and it isn't... I home make most things, and when a person is used to boxed, bagged, pre made high preservative things... Homemade lacks softness and flavor, and salt. However on the flip side I can not stand to eat out any more.

But I want to take care of my neighbor while she needs us. and I have no problem making Fajitas.

-very kind and thoughtful to care for your neighbor so well. Blessings to you!
(and I understand about the "processed and packaged" stuff. -no good especially in lieu of homemade!) My family prefers all of the loaded/flavorful foods from the box. Me - not so much. I like to grow, harvest, juice, and make/bake. I'm "weird" according to my kids.

If I could get my family to juice with me, oh that would be so great. They think it is wonderful that I do it, but 4oz of sweet carrot juice and my son is dragging his tongue on the carpet.
