Hey Grandpa, What's for Supper? Part 2

We had fried red fish wth sauteed eggplant and fried green tomatoes from the garden. Looking for inspiration for tonight's meal. I'm in the midst of doing cooking prep for a big thanksgiving feast as well.

Blooie, that's too funny. I'm travelling over mountains for the holidays also (weather permitting) and am stocking the van with winter supplies today--blankets, water, fire starting materials, food, etc. But you're taking it one step further!

I thawed out a big ol pork roast last night. Probably pulled pork for dinner with slaw.
 
I'm headed in the direction of deep fried buffalo wings. And since I'll be deep frying, I'll also make some fried flour tortilla chips with salsa.

Does anyone here brine their chicken before cooking?
I think it makes all the difference in the world.

Joe, I started brining my home butchered cockerels and we did notice some difference, but not enough to make it mandatory. If I have time, I do it. If I don't, no biggie.

I think most of the grocery store chicken is brined, anyway. I'm not sure brining it would make much difference?

Brining even an already brined grocery store chicken, makes it juicer, and affords the ability to make sure it's fully cooked, and even a bit more, without it drying out.

The other night I tried a recipe for pork, apples, cabbage, onions. Sounded amazing but it was awful.
