Hey Grandpa, What's for Supper? Part 2

Tonight we shall have honey/mustard chicken breasts, green beans, cauliflower, and mashed potatoes.

I baked one of Cornish rocks for Sunday supper. At 2months old he was already over 8 lbs. the broth and flavor were excellent, but the meat seemed stringy. Any suggestions on what I can do about the stringy texture? Thanks!
Did you rest him for at least 3 days or so?
 
Right now a big pot of stuffed peppers is cooking away. It will make enough for tonight and leave at least 4 more meals to be frozen for future use. It will be served with a bib lettuce/heirloom tomato salad, mashed potato cakes, and carrots. Hurry up supper time - I'm hungry.

I'm curious.  What are baked cabbage steaks?  Sounds interesting.

I get that a lot they are think slices of a whole cabbage rubbed with butter, garlic salt, salt and pepper with pine nuts on top you bake them on each side until crispy brown and boom u have relativly healthy platters for your food!!!

Yesterday we had ham steaks and eggs scrambled with peppers from the garden. Garden is still
producing like mad!

Tonight just two of us for dinner so I took the leftover ham steak, chopped it up and fried
it with potatoes, apples, and more peppers. Turned out pretty good! Put two fried eggs on top and made it into a sort of
garden hash. We ate it all! Good way to use up all these eggs and peppers!
