Hey Grandpa, What's for Supper? Part 2

I found some fantastic looking onion buns, so last night, we had hamburgers and homemade french fries. (baked, not fried)

Tonight we are having DS's friend over, so probably something easy, like spagetti.
 
Venison Stew, Corn Bread & Apple Dumplings
2 pounds boneless venison, cut in 1-inch cubes
2 tablespoons canola oil
4-1/4 cups water, divided
1/2 cup tomato juice
2 medium onions, cut in wedges
2 celery ribs, sliced
1 teaspoon Worcestershire sauce
2 bay leaves
2 to 3 teaspoons salt
1/2 teaspoon pepper
6 medium carrots, quartered
1 large rutabaga, peeled and cubed
6 medium potatoes, peeled and quartered
1 cup frozen peas
1 tablespoon cornstarch
Directions
In a Dutch oven, brown meat in oil over medium heat. Add 4 cups water and scrape
to loosen any browned drippings from pan. Add the tomato juice, onions, celery,
Worcestershire sauce, bay leaves, salt and pepper. Bring to a boil. Reduce heat;
cover and cook for 2 hours, stirring occasionally.
 
You will notice I post a lot of recipes on whats for dinner. Things like the stew tonight I will put left overs in canning jars and pop in the presto canner. Put them on the shelf. When we have winter power outages they make nice hot dinners that can be quickly cooked on the grill burner.
This one is also good for storing left overs.

Chili
3 pounds ground venison or beef
24 Roma tomatoes, peeled, seeded, and chopped (or 2 quarts canned tomatoes)
3 cups dried beans, cooked and drained (I like a mix of kidney and black beans)
1 large onion, chopped
2 green, red, or yellow sweet peppers, seeded and chopped
2 jalapeno peppers. diced or 1 cayenne pepper, diced
2 tsp cumin
1 tsp salt
2 tsp chili powder
1 tsp garlic powder
Tomato juice to top off jars
8 pint canning jars
Brown ground meat with onion. Add seasonings, cooked beans, peppers, and tomatoes. (Feel free to reduce chili powder and hot peppers if you like your chili mild, or add more if this isn’t spicy enough.) Cook until vegetables are tender. You may need to add tomato juice so that chili is not too thick for pressure canning. It should be a little bit runny. Ladle into pint jars leaving 1 1/4 inch head space and wipe rims. Screw on canning lids and process in pressure canner for 75 minutes at 15 pounds pressure. One pint jar with cornbread will be a good meal for two people.
