Hey Grandpa, What's for Supper? Part 2

I got back from the store and went a little cook crazy..

Lasagna with spinach, ricotta, mozz, and some "Italian Sausages" from TJ's ..they are vegetarian and taste so close to meat, I had to make peppers, onions, mushrooms and mozz melt for a couple on steamed buns... wow!

And I'm making some Corn Chowder that is really more tater than corn.. without the salmon this time. I want those wraps with chived up goat cheese...

..I'm gonna hurt myself!

The omlettes went over great.

Tonight is spagetti. Its my little of this , little of that sauce! I had some marinara sauce in the freezer. I added leftover diced ham from the omlettes last night, chopped onion(LO too!), LO taco meat, rest of the olives and tiny bit of parmesian I had LO! I will scour the fridge one more time, in case I missed anything!

I need a little help. I want to have chili tomorrow and I always start mine the day before. Unfortunatley I have everything except the spice packet. I am so used to doing it this way that I have NO clue what to use instead. We like ours hot. Can anyone tell me what to use? Thanks so much in advance!
 
thechickenchick- I use an assortment of chili powders, cayanne, crushed chilis, cumin, garlic, onion, paprika, old bay. I add more of the chili powders, chilis ,cayanne and paprika if I want it hotter.

I don't know waht we are having. We all have drs. appts. this afternoon. If we get my settlement check today, I will vote for going out to the mexican place in town. Me and DH are fasting today for bloodtests, A good mexican meal would tase good; with a couple of margs to wash it down with, of course!

I thought we'd have leftovers for dinner tonight, since I cooked so much food last night ..but DH killed the Chowder off for his work lunch ..then got home and ate some Lasagna for breakfast

Well, even though I shopped today, I'm not really making anything of consequence tonight. Not only is there the confounded projected that my daughter needs to finish, but the fridge has a lot of this and that in it that needs to be eaten. So, tonight is the official Clean Out the Fridge Night.

I can't wait to hear how the chili turns out chickenchick. I've done mine both ways and find that the spices I mix always taste better than the packets. What I NEED to do is write down what I do the next time and make up my own spice mix. The packets sure are convenient.
 
This Arctic Blast is getting old.

I went to the bank and did some shopping this morning to stock up on some essentials, since they've predicted over a foot of snow tonight and another 8 - 10 inches tomorrow with blowing and drifting. At least (right now) the sun is shining, it's not too windy, and we're at 3 degrees.

I'm not so thrilled, but the chickens could care less and the lab pup is in seventh heaven, bounding through the snow chasing snowballs. He tries to "retrieve" them.

Tonight is fresh tomato/basil soup and grilled homemade Asiago cheese bread.

I guess I have just cheated with the packets for too long!! Thanks again and I will let you know how it turns out. It is starting to warm up now ans smells pretty darn good!!
