Hey Grandpa, What's for Supper? Part 2

One of my friends gave me a big grocery bag full of absolutely beautiful organic Swiss chard from her yard so I'm planning a meal around that.

Cod (probably breaded and baked with parmesan and seasonings)
Italian Swiss chard with garlic
Rosemary bread.

Oh, better put a bottle of white wine in the fridge, too.

Hot Tottie! That is sounding great!

I am finally feeling up to cooking. Nothing fancy though, just simple. I put a pork sirloin rst in the oven with onion, garlic and spices. I will slow roast it for about an hour then add cubed peeled potatoes, then when those are starting to soften I will add shred up cabbage. By the time its done I will pob be to tired to eat it! But DS and DH will be glad to have "real" food again!

Chicken Tortilla soup:

2 skinless, boneless chicken breasts
1/2 teaspoon olive oil
1/2 teaspoon minced garlic
1/4 teaspoon ground cumin
2 (14.5 ounce) cans chicken broth
1 cup frozen corn kernels
1 cup chopped onion
1/2 teaspoon chili powder
1 tablespoon lemon juice
1 cup chunky salsa
8 ounces corn tortilla chips
1/2 cup shredded Monterey Jack cheese (optional)




In a large pot over medium heat, saute the chicken in the oil for 5 minutes. Add the garlic and cumin and mix well. Then add the broth, corn, onion, chili powder, lemon juice and salsa. Reduce heat to low and simmer for about 20 to 30 minutes.
Break up some tortilla chips into individual bowls and pour soup over chips. Top with the Monterey Jack cheese and a little sour cream.
 
Last night, my DH made some comfort food his granny used to make: sauted onions, garlic, and potoatoes with corn and leftover ribeye steak added in.

It was great to come home to it and add steamed asparagas (which, strangely enough, is on sale for $199 a pound).

Wellllll, we went and got whiskey, that's as close to a hot toddie as we're gettin today.

Red feathers- that sounds great! I'll have to make that this weekend, soup will be very warming.

Aneesa- You should have invited all of us for dinner! Hope you are feeling well.

the chicken chick glad you are feeling better, take it slow for a couple of days.

josh- we LOVE asparagus, but in Ca the only asparagus we can find any more is from PERU, they use such harsh chemicals down there, we refuse to buy ANYTHING that is grown south of the border. I am trying to find out if asparagus will grow at 5865 alt with hot summers and cold snowy winters.

It was supposed to rain all day today but instead we have gotten snow since 10:45. Unfortunately, it is not sticking. It will tonight though.

It was mushroom-barley soup and home baked multi-grain bread tonight. Pear upside-down cake for dessert.

With morning temps of -7 degrees and more snow, I spent the day baking to warm up the kitchen. The multi-grain bread and pear cake for dinner, marbled cream- cheese brownies, and Hawaiian bread rolls for fun.
