Hey Grandpa, What's for Supper? Part 2

got that chicken all shredded last night and went to grab tortillas to wrap enchiladas....nada. None to be found anywhere. Huh.

Chop an onion, cook in butter, roux with flour, add milk, seasonings, a bag of peas and carrots, and a few good hands of chicken meat. Cook on med-low til bubbly, then simmer to let flavors meld. Pan of tater tots in the oven while doing the above......viola. Creamed chicken and veggies over tots

I'm clearing out the freezer to make room for the pork. Found a fresh leg roast (what's usually the ham, but we didn't get it smoked) and thawed it out. Not sure but I think it has a bone in it. will be looking for some sweet and sour type recipe for that, plus fried rice. Sounds like dinner to me!
 
Or brown some ground beef n' onions, toss in a can of tomatoes, a smack of beef broth, green beans, seasonings like salt and pepper, paprika, a little chili powder, some garlic powder, let that cook down until it's kinda sorta thick, dump into a casserole dish, top with leftover mashed taters, brown in the oven, and make what my dad lovingly referred to as slop!
 
Had some great sweet and sour pork and veggies last night. Didn't have time for fried rice so we went with Ramen.

I have a bag of mystery meat from the inside fridge I'm thawing today. I think it's something my Mom bagged up while we were staying in the motel, and it's probably chicken of some sort. No label at all, just a gallon Ziploc bag

I'll check on it throughout the day and we'll see what it is.....

Oh, oh so true! The family raved about the sweet and sour sauce last night, it took me a few hours but I finally realized I should write down the changes I'd made from the allrecipes original. Now, maybe we'll be able to have it again sometime, who knows?

. It was all me.

A while ago I cooked up some chicken legs, but we were meat heavy and no one wanted them. I tossed them in a baggie and into the freezer, and of course I knew I would remember what was in there.
 
I like tossed spinach greens with the little mesclun greens, apple, walnuts and tomato.

My fall back is pasta salad made with cowboy candy and more vegetables than pasta.
