Hey Grandpa, What's for Supper? Part 2

The wife and I both came down with colds, we've been stuck doing soup and grilled cheese.

I'm sorry you're not feeling well, but now I'm thinking grilled cheese and soup for lunch tomorrow

last night was a freezer crockpot meal I'd made back in 10/14. It was labelled Hawaiian chicken. It had chicken breast, carrots, zucchini, pineapple...not sure what else. Put it frozen in the crockpot on high, 6ish hours later it was yummy over some ramen noodles.

Tonight will be a Mexican bar.
 
Tonight is pork roast with carrots. I was going to do mashed taters, but just this morning I was thinking....how about "crashed taters" as my boys call them.....now you posted about them....must be meant to have them!
 
Last night was grilled steak, steamed green beans, crash hot potatoes, and my world famous garlic bread. Homemade red velvet cake with cream cheese frosting for dessert.

Here's the copied recipe if you don't want all the pictures and commentary (but she's really funny!)

  • 12 whole New Potatoes (or Other Small Round Potatoes)
  • 3 Tablespoons Olive Oil
  • Kosher Salt To Taste
  • Black Pepper To Taste
  • Rosemary (or Other Herbs Of Choice) To Taste
INSTRUCTIONS
Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.

On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.

With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.

Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)

Bake in a 450 degree oven for 20-25 minutes until golden brown.



the only thing I change is to use a mixture of half butter/half olive oil, with granulated garlic and onion and mixed herbs. Yum!

the only thing I change is to use a mixture of half butter/half olive oil, with granulated garlic and onion and mixed herbs. Yum!





I do the same with a butter/olive oil combination. They don't brown as much as I'd like without the butter. I usually just chop up some fresh thyme and throw it on there, too. Or rosemary. Really good potatoes. I made them for my mom's birthday dinner, and I had NO leftovers. Bummer.
 
Last night we had lamb leg steaks, marinated with olive oil, garlic, rosemary, browned in a cast iron skillet and then put in a hot oven to finish, roasted baby red potatoes with thyme, and a green salad with lemon/garlic vinaigrette.

I'm tired of cooking, or more accurately, tired of coming up with interesting ideas for things to cook. So I think tonight we'll have either pasta with easy homemade sauce and a salad, or grilled cheese and soup.

, it's my family's most requested meal and it's pretty much a no-brainer to fix. I use spinach in the filling, so I don't even do a salad or anything with it, just the lasagna.
