Hey Grandpa, What's for Supper? Part 2

The First weekend in June always gets a party! Because June is a fabulous month.
Tonight is grilled BBQ ribs, fried plantains, in season fruit salad, Chips and salsa, brownies and ice cream

oh! and my killer baked beans. I do not actually bake them so I suppose I should rename them.
There should be enough food to last until Wednesday.

How do you fry the plantains? I tried frying them for the first time a few months ago. I had no idea what I was doing really, and they were basically awful.

There are two types, the green and the ripe.
You can not let them get too ripe or they make a gooey sweet mess of deliciousness, but it is really messy.

The sweet ones are yellow with the black stripes in them. Cut into one-inch chunks and deep fat fry.
The green ones can be just yellow or yellow-green,
If they are too green they are difficult to peel.

Cut them into one-inch chunks and then smash them in a plantain press. so they are maybe 1/8 if an inch thick. deep fat fry and sprinkle with fine salt. They are like chips, not sweet, but crunchy and salty.
And they do not have a banana flavor.

Last night it was raining so I made Mocha Voodoo hot chocolate. With spiced rum, half and half, whipped cream, coffee, and cayenne pepper in it! YUM! We had it with a plate of ham and cheese sandwiches and chips. Tonight we had cheese ravioli and blueberry pie. Healthy eating, woohoo!
That's interesting!
I might give it a go.

Oh, now you've gone and done it. I'm making my baked beans some time this week. I have some salt pork in the freezer and beans in the pantry, so I'm all set.

Last night I made a riff on Bobby Flay's crispy chicken with mint sauce. Um, no. The chicken was pretty good, but the sauce wasn't savory enough for me. Blech. Served it with my yummy three bean salad and steamed veggies, which were both delicious. Dessert was apple cinnamon bread pudding, which I didn't eat, but hubby loved.
 
I'm in a cleaning out my freezer mode lately. Night before last was marinated and pan fried pork steaks with a cauliflower fried 'rice' and salad.

Last night was crispy chicken thighs roasted with lemon and a sauce of pan drippings, shallots, oregano, wine and chicken broth. Served with steamed broccolini and oven roasted garlic scapes.
