Mom's do that don't they?

You can roast them in olive oil. Clean them up-- cut the bottom and remove brown leaves leaves; cut them if half if they are large. Put them into a bowl and pour in a couple of tablespoons of olive oil or melted butter. put them into a single layer on a cookie sheet and season with some salt and pepper. roast them in a 375 to 400 oven until soft and crispy.

My mom did this to us with blueberries. I did not discover them until about 10 years ago...And I love them!
Pretty much what I did tonight, except the instructions I found (yes, I was so unfamiliar with them that I needed cooking instructions!) said to blanch them for 3 minutes after cleaning them and then dip them in melted butter. So that's what I did, and they were amazing! Olive oil would probably be better for me than the butter, but then I don't imagine my cardiologist would be real happy with the generous amount of coarse salt (and pepper, which doesn't count) that I sprinkled them with before roasting, either!

Blanching is to maintain color--you can skip that step.

Adding a bit of thyme or rosemary is good too.
 
Oh, grilled cheese. That maybe for lunch tomorrow!

Tonight was Italian meatloaf, mashed taters and green bean casserole. It was cold (for us, anyway) today and we were looking for comfort food.
