Pretty much what I did tonight, except the instructions I found (yes, I was so unfamiliar with them that I needed cooking instructions!) said to blanch them for 3 minutes after cleaning them and then dip them in melted butter. So that's what I did, and they were amazing! Olive oil would probably be better for me than the butter, but then I don't imagine my cardiologist would be real happy with the generous amount of coarse salt (and pepper, which doesn't count) that I sprinkled them with before roasting, either!Mom's do that don't they?
You can roast them in olive oil. Clean them up-- cut the bottom and remove brown leaves leaves; cut them if half if they are large. Put them into a bowl and pour in a couple of tablespoons of olive oil or melted butter. put them into a single layer on a cookie sheet and season with some salt and pepper. roast them in a 375 to 400 oven until soft and crispy.
My mom did this to us with blueberries. I did not discover them until about 10 years ago...And I love them!
