Hey Grandpa, What's for Supper? Part 2

It's going to be interesting this evening. DW and DS are under the weather with a warm season cold. We gave some veggies from the garden so I decided to throw together a soup. A while chicken is simmering in a pot of water to make stock. From the garden, I'll be adding zucchini, yellow squash, eggplant, green beans, takara peppers (sweet shishito type), and potatoes. I may also add peas, okra, onion, herbs of course, and perhaps some rice or noodles or dumplings sound nice.

That sounds like a good pick-me-up - almost as good as a hot-toddie :thumbsup
 
Tonight was Yorkshire puds for starters followed by slow-roast pork belly, veg and taters. The crackling was a dentists’ dream so I binned it (after some serious attempts to chomp my way through some of it :oops:)

The soup was delicious, although I wish I had some stock that cooked longer. I ended up making stuffed dumplings. We stuffed them with a mixture of eggplant, acorn squash, onion, potatoes, shredded chicken, peas, salt and pepper, garlic, cumin, and Italian herbs. We boiled them in the soup to cook.

I hope they feel better soon! Summer colds can be worse than normal season colds
