Hey Grandpa, What's for Supper? Part 2

Yesterday it seemed like I was in the kitchen all day. I made Beef Stroganoff with noodles, a salad, and peanut butter bars. Half was sent to my sister and her family.
Today, it was a meatless meal. Fried potatoes, scrambled eggs and toast with jam. I made an applesauce cake, too.

I'll be hitting the kitchen tomorrow as we're having 25-30 here for my Dad's 70th birthday. Also, celebrating a belated Mother's Day.

Happyhen, sure hope your kitty is doing better. It sounds painful.

My Friday isn't always on the same day of the week as everyone else's Friday. Makes sense, doesn't it? My days off move forward every three weeks, so my fifth day of work is pretty much every other day but Friday. Still makes sense, doesn't it? But my husband and our son still have their Friday on Friday.

I commute 75 miles to get home, hopefully by five. My husband drives a car carrier. He gets home when he gets home. I try to cook every night. But, it doesn't always happen as planned. Sometimes, our son gets leftovers, and my husband gets a fresh meal when he gets home. It's not often that we all eat together Monday through Friday. There have been many nights when our son has had leftovers, or a freshly cooked meal just for him, and my husband has come home to grilled cheese or Steakumms and soup.

We'll have pizza once every two weeks or so, and Chinese once every few months. We're in the boonies, and Chinese sucks out here!

Last night we had Eggs Benedict (on homemade English muffins) and steamed asparagus from the garden, all covered in homemade Hollandaise sauce. Can you tell I needed to use some eggs?

Tonight was just grilled sweet Italian sausage, pepper and onion sandwiches on store bought hoagie rolls.

I still love to cook and experiment, so I cook fresh nearly every day, sometimes more elaborate dishes than at other times (like tonight

Any leftovers are eaten for lunches, and experiments gone wrong are eaten by the dog, cat and chickens (they never tell and the evidence is destroyed!

Oh happyhen! Eggs Benedict is one of my favorite things. DH cooks it for me once a year. My birthday or Mothers Day. Well I didn't see it last weekend so.... hurry up September!~! I can do it myself but it just tastes better when its made with love!

Leftover beef enchiladas from last night will be dinner tonight. DS is staying in town with friends so its just the 2 of us. Last nights supper was pretty good and I made way too much.

We hit 70 today finally. I got everything else planted and the yard cleaned up,so I will have a fire going in the fire pit when DH gets home from work and we can spend a quiet evening at home.
 
Cold weather blew in, with hard frost and freeze warnings for tonight.

So to help fight the chill, we had chicken and dumplings for dinner.

Good thing the tomato and pepper plants are still inside at night!

Dinner was lamb chops with a red wine and balsamic reduction, herbed rice, and peas and carrots.

The kids were in charge of dessert. They made a recipe that has been in our family for decades. The family always called it "Apricot Pudding" but it's really more like a cobbler.

2 cans of apricots (don't drain)
1/2 cup sugar
1 box of DRY yellow cake mix
1 cup of butter - melted

Drain the syrup from the apricots into a pan. Add the sugar and heat until boiling.

Arrange the apricots in a 9 X 13 ungreased baking dish. Pour the syrup/sugar mixture over the apricots.

Sprinkle with dry yellow cake mix.

Pour butter all over.

Bake at 350 degrees for 25 - 30 minutes or until golden brown.

Serve warm with ice cream.

I fired up the grill and did chicken leg quarters that had been marinating in herbs, etc... roasted some fresh corn on the cob ..and "baked" fingerling taters in olive oil, little sea salt and fresh picked/pinched herbs from the arm's reach herb garden ..right along side the corn and chicken.

I think DH said "thank you for dinner" about 6 times ..with his mouth full, of course!

We both ate some cheesecake that I made yesterday, for dessert..
 
BB thanks for sharing that recipe! I love apricots and that sounds very easy. I can't wait to try it.

AM it must have been the night for grilling. I marinated chicken breasts all day and DH grilled them. I made home made mashed potatoes. For some reason I was craving them.

HH dumplings may be on our menu for tonight, but it is just to early to tell.

Hi guys.

I think we are having curry chicken tonight. My daughter is making it for us, she's 17 and just starting to show an interest in cooking.... FINALLY!! yay!

Hope all is well with everyone.
 
RF that's great that your daughter is going to cook for you. My son loves to bake! He originally took Home Ec because "that's where the girls are Mom"! However he found out he really likes it. I love it when he makes biscuits from scratch for breakfast! Yummy!!

We decided on grilled hamburgers. I just finished boiling pasta for a "noodle salad" (My DS has called it that since he was little

) and I baked wheat hamburger buns this morning! It is a beautiful day in Montana!!
