Hey Grandpa, What's for Supper? Part 2

Last night I used a pita a bread as the base for a pizza. Tonight it’s soup and bread. I cooked chicken wings in the air-fryer for lunch.
Love the air fryer. Just took try something new and healthy, I made buffalo cauliflower (veggie wings) in the air fryer a few weeks ago. It was really good.

Of anybody is interested, you simply make a batter of flour and water. You could add corn starch too if you like and nearly any flour works (think almond flour for lower carbs if you are like me). The batter should be runny line melted ice cream or crepe batter (ginger than pancake batter). Season the batter to taste - salt, pepper, garlic, cayenne, etc. Dip cauliflower florets in the batter and let then drain well (I placed then on a cooking rack as I went along). Then cook then in the oven or air fryer.
I have a countertop "air fryer oven". I set it to 400F. A normal air fryer will work fine, as will a convection oven. A normal oven may take a bit longer just.
Cook to a golden brown. Then move the cooked florets to a bowl and coat then with buffalo sauce of your choice. Then place them back in ther air dryer/oven and cook 2-3 more minutes so they dont get soggy (dehydrating the sauce a bit).
Serve hot with your choice of dipping sauce!

I have a Tefal version that has a rotating paddle. I’m not sure it would be as effective at cooking food in batter :confused: I may be inclined to add some dry spices to the batter mix to perk up the cauliflower if I do try it.

I didn't know that have paddles. Thats problematic. You cannot turn the paddles off? Does it still use a fan to circulate the air, or just moves the food around a hot chamber?

Removing the paddle is an option, though there’s a hole on the centre of the pan (where the paddle fits). Apparently the 2020 models don’t have the same design flaw :hmm

The best option is for scientists to tell us proper deep-fried food is good for us :lau
 
We have an air fryer now but also have gas stove I love it had 5 burners and is convection
also... Learning what I can make in it so yes have done chicken and do use 400 setting ..
Did not know they made them with paddles ours does not have one :confused:
 
Do not like grass fed beef it has a funny smell if their not grained out the meat stinks..

Stinks? I've never heard of such a thing.
Cattle are naturally grazers, not granivores. Forcing them to switch from their natural food source to grain does several things. It makes the animal fatter. That means, gram for gram, grass fed and finished beef is lower in calories. More important to me is that the extra fat is less natural. Grass fed/finished beef has much less monounsaturated fat than grain fed. Grass fed has 5 times the amount of omega-3 fatty acids. The healthful fatty acid CLA is twice as high in grass fed beef. Grass fed beef is much higher in vitamin A, E and other antioxidants.
The same differences apply to lamb, bison and other grazers.
I grew up raising cattle too. For most of my youth we ate almost exclusively our own beef and pork but they didn't finish in a feedlot.
My wife has quite a sniffer on her and if there was a detectable difference in smell between the two, she would know it.
People have eaten cattle and other grazers and browsers throughout evolution and finishing on grain is a relatively new phenomenon. We really only do it in the US, Canada and about half the cattle in Mexico. Most other countries in the world don't feed grain to cattle. Australia, New Zealand, Africa, Brazil and one of the best places in the world to get a great steak - Argentina.
 
Sorry was raised on cattle ranch Daddy swore by grain them out meat is better marbled no odor ... I tried honestly to eat grass fed it smelled awful cooking it ... Daddy was a Iowa born
think it happens graining them more than one may know
Now to grain one out he did 1 month so not not a bunch of fat
