Hey Grandpa, What's for Supper? Part 2

we ate early today. I was supposed to have a late lunch around 1pm with guests who were coming over, but it turned into an early dinner at 3pm. They are on a similar diet to mine, so I made low carb chicken tacos. I made tortillas using almond and coconut flower. Instead of rice, I used riced cauliflower and broccoli. We also served them with homemade refried beans (there's a lot of carbs there, but used them sparingly). The tacos were really good - better than I thought they would be actually.

Tonight we will eat beef barley soup. We went to Delicious Orchards in Colts Neck, NJ today, and this is what we bought : spinach, red cabbage, broccoli, green beans, yellow squash, red potatoes, baking potatoes, apples, sweet onion, plums, nectarines, heirloom tomatoes, Bibb lettuce, butternut squash, onions, garlic, yams, bananas, dates, blueberries - and then the 'bad' stuff - apple pie, eclairs, cherry turnover, hot cross buns. I am cooking the spinach now to make creamed spinach - should be enough to freeze for 4 meals. Lots of healthy stuff here. It's a ride for us, but the quality of the vegetables is very good, and then of course there's the baked goods. :oops:
