Hey Grandpa, What's for Supper? Part 2

thechickenchick - Sunday is often leftover day around here. I typically do my grocery shopping toward the beginning of the week so it's nice to have a tidy fridge before stocking up. Plus, I'm all for making use of what we have.

If dessert for dinner incorporates such yummy things as you described, I just may have to surprise my family and make dessert for them one of these days. Feel free to share any of those recipes!

I spent the day at a Civil War reenactment with DS, so planned for an easy supper - pre-made teriyaki chicken meatballs heated in the microwave and served lettuce wrap style with lettuce, grated carrot, bean sprouts, leftover rice, and cilantro, with some Yoshida's for dipping. Easy and tasty!
 
Yesterday, I fixed fried chicken with gravy, rice (just didn't have time to peel potatoes), seasoned corn and sweet potato biscuits.

Today, we are having meat loaf, cheese potatoes, leftover biscuits and peas. I have a banana cake cooling waiting to be frosted.

Backyard Buddies, your meal yesterday sounded like a lot of work, but really tasty. We've not tried lettuce wraps, but I'm thinking we'd like them.
Those Civil War re-enactments are a lot of fun. All that history shared - a great way to spend the day.
 
This is the first I've wandered into the recipe section, so I've never seen this thread before. Good grief, look what I've been missing!!! Dang!

Supper for us tonight is stuffed manicotti (lots of cheese and some Italian sausage) and asparagus with a hollandaise sauce and a salad. Strange? Probably, but I want it, therefore that's what we're having. Dessert is going to be something involving rhubarb, raspberries and jello. Not sure what yet, but I think I may incorporate a graham cracker crust as well. We'll see how it turns out.
 
gudrin - Glad to have you with us! Yes, this group has been around for some time. As you see, we have quite a few pages in this thread and this is part 2! It's always nice to have a new friend at the table!

Your dinner sounds delicious! Do you grow the rhubarb at home? My hubby LOVES rhubarb so I just may have to plant some.

prairiegirl - Your dinner sounds like pure comfort food! Yum! Really, my dinner last night was easy-peasy. It was so easy that I didn't even make it. Hubby did. The teriyaki meatballs were by Aidell's, you know, those sneaky sample people at Costco who shove tasty morsels toward you to tempt you to buy!

- heated in the microwave for a couple minutes, wash the veggies, chop the cilantro, grate the carrot - and throw it all on the table with some dipping sauce and let people build their own. The rice was already made - leftovers in the fridge - and just needed a zap in the micro. It was all on the table in 10 minutes.

Dinner for tonight is in the crockpot. I'm making a sort of a cabbage rolls casserole - all the same ingredients but skipping the steaming, stuffing, and rolling of the cabbage. It's made lasagna style with cabbage on the bottom and top and the filling goodies sandwiched in between. I hope it's good.

I cooked today and fed 3 families on what I fixed a kettle of pinto beans fried taters and corn bread. Needless to say I didn't eat I don't like pinto beans.

Its wonderful to have another cook in the kitchen gudrin! We are so glad you joined us. If I am to busy to do anything else this thread is a must check! The people here are fantastic. Very supportive and not only with food issues. It is our little community within a community!

I hate to admit it but I pulled the "leftover" card again last night. We ended up eating a huge and wonderful lunch at my MILs while DS was in Drivers Ed. We had Roasted chicken with dressing, garlic mashed potatoes, gravy and corn. Also her famous Chocolate cherry cupcakes.

She sent home a plate for DS to have for his supper. So hubby had some leftover casserole and I had Malto Meal!

Back to town today for Drivers Ed so I need o come up with a plan soon. Anybody have a good crock-pot recipe for hamburger?
 
I still can't believe your DS is in Drivers Ed, thechickenchick! I am soooo not ready for that!

Hamburger in the crockpot . . . There's always goulash, one of my kids' favorites - brown burger and onion (I also add celery), seasoned with garlic and some Italian seasonings. Drain and drop in the crockpot. Boil some macaroni so that it's just slightly cooked. Drain and dump it in the crockpot and add a couple cans of spaghetti sauce (I use the Hunts in the can because it's a little less Italian-y, more tomato-y with just a few spices). This is such a BASIC meal, but it's one of those comfort meals handed down from their g-grandma and they love it. You could also do some version of a Swiss steak. That would be easy, too.

Today is DS's 14th birthday so dinner is his choice today - Chinese Chicken Salad. I have to prep it all early because he won't get home from marching band practice until after 5:00. I'll probably bake him some of my famous chocolate chip cookies as well (Tollhouse recipe with 50% more chocolate chips - no nuts).
