Hey Grandpa, What's for Supper? Part 2

@breeder tell me about 'stewed potatoes'. How are they cooked ?
@sourland and @penny1960 Here's my best shot at a recipe for stewed potatoes:
Potatoes peeled and cut into 1/4"-3/8" thick slices. Put enough oil/butter/lard/ bacon grease in a pan to cover the bottom just (like you would for sauteeing) and place potatoes in. Slice a small onion and add on top of potatoes. Season with salt and plenty of pepper. Once the potatoes brown just a bit at the bottom, add some water. You don't want to cover the potatoes completed in water, but just enough to simmer them. So not let the pan dry up. Cook on a simmer until the potatoes are tender as they would be if cooked in a stew. They will thicken from the potato starch and the potatoes will crumble a bit. The final result is a bit of a cross between boiled and mashed potatoes.

I like to add garlic, herbs, bacon, cheese... anything that goes with potatoes.
 
Tonight is savory stuffed pumpkins from the garden. They are small so I made two. One wouldn't hold all the filings. I filled them with braised short rib (shredded), potato, carrots, celery, rice, a bit of parmesian cheese. I added chunks of apple to one of them too just for fun. Oh, and I added a chunk of homemade bacon to the short rib.
