I'm a nut when it comes to making biscuits. I use baking powder. I work with COLD butter and do my best to avoid getting it warm until the dough is in the oven. I prefer a dough mixer utensil over a spoon or hands for working the dough. I nit only roll the dough, but fold it at least 4 times, rolling after each fold.You can drop baking powder biscuits
Biscuits are a not of a thing for me... and a but of a chore...
A random note, my biscuits are square. I don't own a biscuit cutter and using a cup is such a pain. I just decided to cut the dough into squares one day instead of circles and I never looked back.
