That was chicken thighs, leftover hubbard squash and rice.
For tomorrow, I am thawing a smaller turkey that we raised and slaughtered ourselves. It's been in the freezer a while now, but still looks good. Hoping it tastes yummy.
turkey is in the oven. I stuffed a turban squash with a mixture of walnuts, brown sugar honey and maple syrup topped with marshmallows and will be adding that to the oven soon. I need to make another vegetable, perhaps green beans or just a fresh tomato and avocado salad. It looks like there's some drippings collecting in the roasting pan so I might make some gravy to go with the turkey.
Stuffed turban took me than an hour to cook. I underestimated that. It actually took about 2 hours in the oven. Since it wasn't ready for dinner I left it cooking and microwaved some leftover hubbard squash. At least the hubbard is almost gone. This is the third day eating it. It's delicious though. Looking forward to the stuffed turban squash tomorrow.

5 ounces fresh baby spinach
2 small apples, cored and thinly sliced
1/2 cup chopped walnuts, toasted
1/3 cup dried cranberries
3 ounces crumbled cheese
Apple Cider Vinaigrette Ingredients:
1/4 cup extra virgin olive oil
2 tablespoons apple cider vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
1 small garlic clove, peeled and minced
Salt and black pepper to taste
