Hey Grandpa, What's for Supper? Part 2

I felt Greek influenced today. I did pork braised in tomato sauce with onions, peppers and potatoes. Not that it was the only seasoning, but parsley and dill really made the dish.

Chunked up some taters, carrots, celery, fresh beets, and parsnips into a large bowl. Added olive oil, salt, pepper, garlic powder and paprika, tossed, and then roasted them on a sheet pan. Delicious, easy!

Left over stew, Crescent rolls and a salad.

Turned the leftover braised pork into pasta sauce by adding some more crushed tomato. Served it over fettuccine.

Son and family have tested negative for Covid and are coming for 'Christmas'. I will make pierogies, kielbasa in sauerkraut, a ham, and salad.

The tree left shortly after Christmas. It drank very little and was dangerously dry by then.
