Hey Grandpa, What's for Supper? Part 2

Yes, I think we are talking about the same place. Basically a "hole in the wall" and same guys working there since the 80's. They steam the flour tortilla with cheese and build the burrito anyway you want. My mouth is watering just thinking about a nice big Super Carnitas burrito with jalapenos and extra hot sauce.

TIP: on the nanner leaves. I used the pieces leftover from cutting out the 8" square to line the steaming pan. Also, I watched a You Tube and the lady there boiled the leaves for a few second and since I have an electric stove I did that way instead and it worked great.

Happy Saturday all!

Thursday night DH grilled a rib steak for us to share. He also made garlic mashed potatoes with potatoes from our garden. I made creamed peas (for the first time) with our own garden peas. There is just something about preparing and eating food you raised yourself.

Yesterday was cold and rainy here in Montana, so I baked! A double batch of Banana Bread, half with walnuts! I also baked Mock Apple Pie. It is a recipe of my Moms. I remember eating it for the last time when I was about 11 or so. My Mom has been gone 8 years and I have never tried to make it.

Well I decided yesterday to give it a try! It is a Zucchini pie that is meant to taste exactly like Apple pie! I remember my Mom fooling lots of people and never telling anybody!

It turned out fantastic and better than any apple pie I had ever baked. My DH was impressed, AND thought it was apple too. He wants me to make it for a family gathering and see what everyone else thinks.

If anyone has loads of zucchini and wants to give it a try, let me know. I will share the recipe with you. I am not sure whats on the menu for tonight.

My DH has a new grill he got for Father's day, so yay, I've been able to get him to cook once in a while! The other night he grilled baby back ribs using indirect heat; was very proud of how they turned out! They were good! WE also had veggie slaw and potato salad from the deli, and canned baked beans. This is my first year gardening and the results have been dissapointing; I was blaming it on the weather for a while but not so sure now, now I'm blamng it on not having any time. My DS was always in charge of the veg garden before this year but he is in the milirary now...sigghhhhh.

Moms Mock Apple Pie

4 cups sliced zucchini If you cut in half then scoop out the seeds, then slice thin by hand (I use my food processor) then they resemble apples

Thin is important as they are a little tougher than an apple.

3/4 cup sugar
2 T minute tapioca
4 T lemon juice
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 T corn starch
Dot with butter or margarine
Bake in double crust. 400 for 55 minutes.

Let me know what you think!!
 
Thanks for the recipe chickenchick! I have made a mock apple pie for years. I got the recipe in home-ec in jr. high. But mine uses RITZ CRACKERS!!! It fools everyone and is so easy. If anyone wants the recipe I can post it.

Today my sister and her husband and one of their grand-daughters are coming over. They are bringing our DGD home, she was staying with them for a week. Our Dad is coming also. DMIL is coming also. Friday was her 75th birthday and tomorrow is DH's 45th! So we are going to have a party!! We'll shoot bb guns, use our archery range that DH just finished, and enjoy eachothers company. DH is going to smoke a couple of tri-tips and smoke a cedar-plank salmon. We will have mac.salad, baked beans, mac-n-cheese for the kids, two kinds of cake and homemeade vanilla ice cream!

We had a surprise on Friday, DH wasn't working and called me outside. In our chicken coop was a white dove!!! It has a hurt leg, has a band on the other leg. We can't get close enough to it to check the band. We have asked around and only one person around the valley raises doves/pigeons but they sell to restaraunts. We have several 'camps' around here and DH thinks thaey did some kind of ceremony or something and released doves. It looks as if we have aquired a new animal. The chickens at first were pecking it, now they seem to be okay with it in their coop, as long as it doesn't get too close to them. We have been feeding it scratch, it seems a little more at ease with us. When we can get close er to it without it flying off, we will block off a section of the coop for it. DGD will be happy to have another animal!

I made a bunch of comfort ..read: homemade junk ...food on Friday, and we went to a Reptile Show yesterday ..so it was leftovers last night! Pizza, buffalo chicken strips, tater tots, cheesecake.. and so on.

Today, I think I may crank up the rotisserie ...and then finally run out to get my nanner leaves while it spins

Interesting! My gram made a mock apple pie also, but it used Ritz crackers instead. It really tastes like apple pie! I'll try this one also! Thanks.
 
An accident in the kitchen turned out really tasty and juicy..

I was seasoning a small chicken for the rotisserie, so I had the bird in a bag and was dumping stuff in... when ..OOPS... I got a little creative.. and overzealous.. thought I'd try some Carne Asada seasoning on the birdy this time... so I screwed off the top and started shaking before I realized.. uhh... this doesn't have a shaker top on it ..and really DUMPED a buttload of this spicy seasoning on my poor bird.

In addition to EVOO, red Mediterranean salt, fresh ground tricolor peppercorns, paprika, parsley, a few generous dashes of Worcestshire sauce and a couple shots of Crystal's Louisiana sauce.. 3 or 5 T. of Carne Asada seasoning ..LOL ....makes for a very juicy, not too spicy, flavorful bird!

I made tater salad with fresh tarragon, fresh peas, capers and a slight bit of mayo (instead of vinegar and oil) ..served warm.

There was something green, but I can't recall what it was now..

I think we'll probably have leftovers today... I have some major Zoo chores to get on

Looks like we're having BLT's. SO just cooked up a bunch of bacon. I better go and get my home made bread out of the freezer. I slice it up and freeze it, 2 pieces at a time. Then when I want some bread, I just toast it up. No one else here will eat real whole grain bread and I don't like that white stuff they call bread.

That mock apple pie recipe sounds good, I'll have to try it in the next couple of days, but after the current heat wave.
