Hey Grandpa, What's for Supper? Part 2

i dont know what to make for dinner..i have some hamburger meat..i guess hamburger steaks or something..or porcupines?

Last night was a shrimp pasta with sauteed onion, yellow squash, spinach, and parsley in a butter wine sauce. Tonight I am not feeling all that great, so it is rice noodle soup, green beans, and a dessert of cantelope.

Sandee - try them, we love that recipe. BTW, I make the cream sauce with 1% milk to cut the calories. Delicious that way too, we don't even miss the cream.

Tonight's supper...
Grilled Scallops, Shrimp and Venison Kabobs
Bell Pepper, Onion, Mushrooms
Scalloped Potatoes
Baby Leaf Lettuce Salad
 
Last night I made this chicken and rice dish - very good! I made half the recipe using 4 chicken thighs, 1 cup rice and 2 cups broth.

Basque Chicken and Rice - serves 4-6
2 TB olive oil
8 pieces of chicken
3 cloves garlic, minced or grated
1 medium onion, chopped
1/2 green bell pepper, chopped
opt. small jar of strips of pimento
opt. 1/2 cup halved olives
2 cups rice
4 cups chicken broth
1 bay leaf
salt and pepper
opt. pinch of saffron
opt. pinch of smoked paprika

Heat a large saucepan or Le Creuset French oven on the stove top, add oil, saute chicken pieces until browned, remove to a platter. Add garlic, onion, bell pepper and saute until onion is transparent. Deglaze pan with about 1/4 cup water. Return chicken to the pot and add rest. Bring to a boil, cover, reduce to a simmer. Cook 25 minutes or until rice is tender.

I did add the pinch of saffron and smoked paprika, but I have to say I didn't detect them too much in the finished dish. I added the olives because I love olives but I didn't have the pimento on hand. There are leftovers for lunches this week too! This kind of recipe is excellent the second or third day.
