Sorry to hear that you had a rough day. Hopefully you were able to relax in the evening and today will be better.

Sandee

You are both so sweet....thank you so much.

I am feeling better today and we are having fried catfish, french fries, squash, hush puppies, sliced tomatoes and cucumbers.

Sounds wonderful Betty.

We had cucumber/onion salad and HM chicken and noodles last night. It is supposed to be 90 today, hottest we have been yet this summer, so I want to do something requiring little or no heat

Living on the Texas Gulf Coast I know all about hot... 90 is a spring day for us.

I have a second stove hooked up in my garage...keeps from heating up the house. I picked it up for a song at a garage sale many years ago and it's still baking like a champ. I use it if I have a pot that's got to cook a long time or if I need to use the oven. It also comes in really handy during the holidays.

Crock-pots are a great way to cook and not heat up the kitchen...I stick that out in my garage too.

Chili dogs can be done in the microwave. Steaks or hamburgers on the grill...cooking outside is a great way to go.

Tuna casserole doesn't take a lot of prep and you can bake it off in the microwave.

Tacos are quick and easy to put together.

Hamburger steaks are good...
1/2 pound of hamburger per person...cook them on the grill.
Make some brown gravy out of a packet and grill some onions.
Put it all over the hambuger along with some melted cheese and it's really good.

Thank you for the great ideas! The hamburger steak one made my stomach growl. Also a stove in the garage is an excellent idea!! I see them pretty cheap on CL once in a while.

Instant mashed potatoes saves a lot of heat going into the kitchen. Just put all the liquids and butter in a large bowl heat it to a boil in the microwave then dump the potato flakes in, stir and cover. After they have set a few minutes stir and serve. I alway add twice the butter the recipe calls for and add a little heavy cream to the milk. Makes them really good.

Melon & prosciutto, potato salad, sirloin burgers on the grill. Oops, how could I forget-fresh picked sweet corn and heirloom tomatoes.

People here talking about the heat. It has been 100+ for past two weeks. We use a camp stove on the back porch for cooking/canning when it is too hot. We also have a oven in our BBQ set up so I can do pizza, etc. when I don't want to heat up the house. Been so hot that I had to take the solar cover off the pool since it got it up to 102+ and turned it into a giant hot tub. Not very refreshing when it's over 100 and you are trying to cool off.

Last night we had fried chicken and garlic mashed potatoes. Don't know why I didn't make a vegetable - but we still had plenty. I made some fresh Mozzarella cheese this weekend and we had it with fresh picked tomatoes and basil from the garden - We just love that salad so refreshing and cool.
