Hey Grandpa, What's for Supper? Part 2

Last night we had baked chicken, stuffed mushrooms, and fresh cucumbers, tomatoes and green onion from the garden. It was delicious

Due to a gluten intolerance, the breading is made from rice bread crumbs. It took a while to find products that are decent tasting substitutes for wheat, but PaneRiso makes some great rice bread crumbs. I have also used them to make breaded veal cutlets and fish and I like it better than regular bread crumbs. Still trying to find good tasting gluten-free pasta.

Looks yummy! We've been there, done that on the gluten free diet. My son has a growth delay and celiac disease was one of the causes they were looking at. We did the diet while waiting for the results of his testing via an extensive study. It wasn't easy, but it was doable. My kids still miss the brownies. If they were more readily available, I'd still be buying that mix!



Dinner tonight was B4D, simple. Last night was spaghetti, salad, and sourdough bread.
