Baked ham, scalloped potatoes, green beans, biscuits and a peanut butter semi-freddo over warm chocolate waffles (which tasted like a melting Reese's cup) for dessert.

I wanted the ham bone for split pea soup in the not so distant future! I know, one of those soups people either love or hate.

DH and DS absolutely love it with hunks of warm cornbread dripping with butter.

In response to Backyard Buddies, cooking is fun and relaxing for me. And I'm blessed with a DH who will try anything.

Here goes... I'm sorry I can't credit the source of these treats since I never wrote it down.

Peanut Butter Semi-freddo Serves 4-6

1 cup heavy cream
7 TBSP powdered sugar
1 tsp vanilla extract
1/2 cup smooth peanut butter

Whip cream, powdered sugar and vanilla until stiff peaks form.

Place peanut butter in small bowl and stir in 1/4 cup of the whipped cream. Gently fold peanut butter mix into the remaining whipped cream. Cover with plactic wrap and freeze for 1 to 24 hrs.

Chocolate Waffles makes about 6 waffles

4 ounces bittersweet chocolate
1/2 cup butter
1/2 cup sugar
4 large eggs
2 tsps vanilla extract
1/4 cup milk
1 cup flour
1 tsp baking powder
1/2 tsp salt

Melt chocolate with the butter.

Whisk sugar, eggs and vanilla, Whisk in chocolate mix. Stir in flour, baking powder and salt.

Cook in hot waffle iron.


The waffles are great with ice cream too. Mint chocolate chip, vanilla and black cherry being some of our favorites.

The peanut butter semi-freddo is also good served in a small bowl with half a Hershey chocolate bar tucked alongside.
 
wow I'm so jealous my fridge is still broke and the oven too. We went and bought a little fridge so we could keep the essentials , milk half n half, butter a few eggs. And we bought a new coffee pot and microwave. Still waiting for the check from the insurance company and waiting on the parts for the stove and fridge.
I'm going to cook up a storm (no pun intended) as soon as that repairman fixes my stuff.

purr, that must be so frustrating, not having a working kitchen! I hope those parts come in fast.

I freaked when our kitchen fridge (THANK GOD we have a chest freezer and small "overflow" fridge in the garage) died 2 days before Christmas!

Why is it that the kitchen seems to be the "heart" of a home? It seems to be the place where everyone seems to gravitate.
 
Pan-fried okra that I had sliced and breaded and frozen earlier in the summer, "gourmet" grilled-cheese sandwiches with cheddar and homemade goat's milk ricotta, and then a dessert I made up on the fly that turned out really great:

Buttermilk biscuits, split in half on a plate
A spoonful of vanilla yogurt on each half
A sprinkle of brown sugar over that
Finished with a spoonful of fresh peach preserves

Yum!
 
Last night, I grilled chicken with sesame-ginger-tamari sauce, and roasted beets, sweet potatoes, and onions in the oven, and served it with gorgeous artisan bread that came in our CSA basket.

Thank you very much Happy Hen! I hope to get that made in the next day or two. We have a BBq to attend today. Its raining and 50 degrees! We are having rib steak and I am taking a fruit tray. The rest is potluck. Honestly I would rather stay at home in my jammies and watch Nicolas Cage on TV!!

), my mom is making her special cowboy beans, and I am making cobb-aroni salad ( cobb salad ingredients w/ out the health benefits of lettuce, with the added carbs of macaroni) and homemade brownies and ice cream.
