Hey Grandpa, What's For Supper?

Since it was just DH and I tonight, I made potato pancakes, with a twist. Normally we just have them with sour cream and applesauce.

I topped the pancakes with smoked salmon (splurge, but not too bad) and creme fraiche and garnished with chive spears. My version of crepe suzette for desert. The leftover crepe will make a great breakfast this weekend stuffed with scrambled eggs, the leftover salmon, chives and creme fraiche.

I have a cabbage in the garden that is screaming "colcannon" for tomorrow, with a nice ham slice!

This is a baked German pancake with her homemade buttermilk syrup recipe! Yep! Its breakfast for supper tonight!

well I'm at a loss, I don't know what to cook.

I've been feeling tired and out of sorts lately so I went to the Dr. and they called back yesterday and said I have early onset diabetes.
So I guess I'm going to have to figure out what I can eat and what I can't.
I have another appointment tomorrow and hopefully they will have a diet I can follow.
 
Hang in there purr.........it will work out.....the "diet" in general can be very easy. Check the American Diabetes Associations website..... lots of info!

Last night was once again "grab and growl" (leftovers)

Tonight is chili and cornbread with salad and maybe if I get it all together...................cobbler.
 
Backyard buddies, thanks for the info on the Angel food Ministries. Definately some worth looking into for our area.

That's crazy that y'all like pancakes for supper. I think I'll try that one with the salmon. Sounds like something different. Sometimes I hate thinking of supper 'cause it seems that we eat the same things over and over again.

I'm making lasagna for my Dad's birhtday tonight. My mom was/is the worst cook EVER! We grew up raising our own meat and all three of us kids turned into veggies because we HATED meat. Meat was like bubble gum...the longer you chewed, the bigger it got. Since I met my husband (a chef), I re-experienced meat. Anyway, back to the point, my father's wish for his birthday supper is that my mom wouldn't cook it.

I have a big bowl of chili left over...so I'm cooking up some mac and cheese, putting that as the bottom layer in a casserole pan, a layer a cheese, a layer of chili and then more cheese...baked for half an hour and served with sour cream, fresh salsa and garlic bread. In other words, Chili mac!
