Hey Grandpa, What's For Supper?

Ya'll sure are makeing me hongry with all this jabber about food. I'm so empty I'm burping fresh air and ya'll keep going on about all them good beans and such.

Redfeathers, you gotta be a transplant. People don't normally eat like that in Oregon do they? Two bags of pinto beans and only enough left over for one meal. What are you feeding: University of Oregon football team?
 
For my beans -

I soak the beans over night. I strain off the water and fill with fresh. Bring to a boil. Put a lid on. Turn off the heat. Let sit for 30 mins. I add ham hocks, whole garlic cloves and very finely chopped onion (not alot) then bring it back up to a boil and reduce to a low simmer. As they start to soften taste them for salt.

When they are soft I take out the hamhocks. In my big cast iron pot I melt lard or bacon grease 2 tbsp maybe, and when it is hot I spoon in beans. I stir and mash in batches until I have done the whole pot. When all the beans have been fried out and mashed I bring them back up to a quick bubble (they are thick and they will splash so be careful!). I stir in 2 or more cups of cheese and whip until it is all melted.

We eat them with spanish style rice and corn bread as a meal. Sometimes I will do some pork cooked out with onions and tomatoes and jalepenos and sweet peppers and we dip with flour tortillas like a spoon.

My mouth is now watering. I think I have porkloin in the freezer ...

You're right I am a transplant from PA. I was born on the east coast but moved here as a young girl, but I still remember eating Perogi and my French Fries always had malt vinegar on them.
 
That was funny Yogi...but no, the football team can't have the leftover beans, they're mine!!!!! Miss Prissy won't feed me so I guess I'll have to go live with redfeathers to get great meals!!! Right now I am going to get that unicorn bread started, lol! Thanks Diana, that looks like it will turn out great. What's for supper at your house Yogi?

I made probably my best pot of red beans and rice for supper last night. You would be proud even if they are zatarans. I did have to do some, ok a lot of adding stuff to it but boy did it break a sweat!! Good thing I had a 6 of Blue Moon to cool things down

Don't yet know what I'm gonna do for supper. Brandigirl is feeling somewhat poorly this morning. I think she od'd on BYC last nite. Poor ole thing can't handle to much excitement at one time.
Gotta get to Wally World for some shopping. Just love pushing and shoving around with all them funny talking folks from south of the border that shop on Sundays.
Working on a menu.

Ugh, no, I don't. Never heard of such. Purple hull peas at my homestead are precious and treated with respect. Are you for real about the jelly? I'll bite.

Now you're talking of one of my favorites. Did you by chance have some smoked pork sausage links to season them with? Ain't nothing wrong with Zatarans seasoning. You haven't hit on a single thing yet that isn't on my list of favorites!!! I love red beans and rice, black beans and rice too!! We had stir fry (sesame/ginger/soy seasoning) with red, yellow, orange/green bell peppers/ zucchini/portabellas/cabbage/and a thinly sliced piece of round steak...all over brown rice and since I had no sour cream to make Diana bread I made foccacia with olive oil and parmesan on top...I thought it was really good, DH and son's girlfriend did too, my son, however, is really picky and he wanted marinara for his foccacia and picked out all the peppers and zucchini in his stir fry and ate only the meat and cabbage and rice...takes after Sammy's side of the family I guess, lol!!! My daughter would have scarfed it up if she had been home, kids are so different, he is a meat and potatoes kid, she eats everything.

I am going to make that bread though, will have to get some sour cream this week.......​
