While in the market yesterday I spotted some fresh pigs feet that screamed "buy me" for $0.69 / lb.. So I did!

Tonight was Irish crubeens with a mustard based sauce, potato mash, boiled cabbage, fresh baked brown bread and a Porter cake for dessert.
 
I didn't cook today...

But I've put a roast in the frig, will have the fixings to go with it.
Set to make my homemade rolls in the morning. ( I chill mine for 6 hours)
Am trying a new pecan pie recipe...before the holidays...and looking forward to the Holidays!
Oh, we have a fellowship meeting at our church this Friday night...we serve refreshments...

And then the 12th is the Sectional Banquet at our church....thats 5 churches plus ours coming together, from 3 counties. I know some of what I will fix for then...always interested in recipes for LARGE numbers of folks.

Back with oven baked salmon fillets on top of chopped veggies that include spring onions, carrots, courgettes, and topped with lemon zest, lemon juice and chopped ginger. Wrapped in parchment and baked at 375 for 25 minutes. Yummy!
 
Snow and sleet today here in the Heartland! So, we are having pinto beans and ham in the crockpot, with cornbread on the side. Not a favorite of the kids, but DH and I like it...cheap and easy, too.

His choice is Tzones (just like Pzones from Pizza Hut 'cept mine are home made and my name starts with a T so DH and DS lovingly nick named my calzones, Tzones!). Carrot cake (his favorite) for dessert. I will be on the stair master ALL day tomorrow so you won't see me here!!!

Backyard Buddies.. here's my version of Karahi Chicken

2 kg cube size boneless chicken, 1/2 cup ghee, 1 T. crushed ginger, 1 T. crushed garlic, salt, red peppers, green chilies ..I substitute one of these with a mild pepper... 6-8 tomatoes, fresh coriander

Heat ghee and add chicken. Fry on low heat 'til the water in the chicken dries. After the water dries, fry the chicken in the oil 'til it turns golden. Add salt, red pepper, ginger and garlic... and 1 T. Achar Gosht masala now, if you prefer it. Cut (and remove seeds ...optional) tomatoes and add in the chicken. Cover and cook at low heat. Let the tomatoes cook and when you see the oil rise over the chicken, sprinkle fresh coriander.

If you want "White" Karahi Chicken, add a 1/3 c. of plain yogurt ..or even a little sour cream ..with a little water ..in the first steps.

I often add potatoes and carrots to this ..to tame down the heat from the peppers and masala ..and to add a little bulk to the meal, overall.

Serve over fresh Basmati with naan and a crisp green salad

(normal taco shell, with Vegetarian ground "beef", and sprinkled with Kraft cheese. Then, add salsa.) I added Mild salsa, since I'm not a big fan on spicy foods.

Lemon Chicken!! Yum Yum! Thank you Aneesa Muse for this recipe awhile back... Its a Favorite now! ( I make the sticky sticky sweet kind)!

Oh yeah.. with White Steamed Rice and Steamed Vegetables that have pasta pieces in it!

Well tonight I am thinking meatball stroganaff. DH filled our freezer with deer burger this past 2 weeks. So I have been scouring my cookbooks for burger recipes so we don't get burnt out on meatloaf, spagetti and tacos!!
