Tonight is Tamale Soup with cornbread and a whopping big ole glass of sweet milk.
(Yogi - I just tasted that soup, it is almost ready to eat and some of the best stuff I have ever put in my mouth) Thanks

Dinner tonight-
Leftover b-b-q country pork ribs I will put them on homemade hamburger buns
Leftover baked beans
milk

Dinner tomorrow night-
Mexican pot luck at DGD school sports banquet
I'm taking baked chicken chimichangas, of course I won't be eating them though

Seems like everyone here is ready for summer-all the b-b-q!

Today is definitely a 'chili' day!
Will serve that with sides, . baked potatoes..and .....haven't decided yet. Coleslaw sounds good, I think i'm out of cabbage, will scrounge around and see what I come up with...who wants out in the cold! :eek:
Always have hot cornbread to serve, going to make up some hot chocolate...
Might even make a few popcorn balls.I didn't get to make any this winter because of my arm..and this is the last 'winter days' for awhile, here I'm sure!

tonight, chix parm, spaghetti and a salad...tomorrow, maybe that tamale soup...if I can find "tamales" in NH, and what are chili beans? Am I buying chili with beans or am I looking for something else...I usually make chili with red kidney beans...oooh, I will give everyone my chile recipe...an easy one and tastes pretty good!
 
Look in the canned bean section at your grocery store, Cheryl. Bushes makes a chili bean. They are pretty good too. The tamales will be in the section with the ethnic foods. Sometimes they are canned or you might find them in the freezer section.
 
Chili
1/2 cup olive oil
1/4 cup chopped garlic
1 cup chopped onion
2 1/2 lbs. ground beef or turkey (no chicken here!)
1 tbsp. salt (adjust as you see fit)
2 tea. black pepper
1/4 tea. cayenne pepper
at least 2 tbsp. chili powder (I always add more)
3 cans drained kidney beans
64 oz. prepared tomato sauce

saute garlic and onions until soft
add ground meat and saurte until cooked
add remaining ingredients, stir well, cover and simmer for 2o minutes
check for seasoning and serve

Additional fresh chopped herbs can be added, especially cilantro, parsley, chives, scallion

In a bowl or bury a baked potato, add chives/scallions, sour cream cheddar cheese... what ever your heard desires...

With leftover chili! Appetizer!

9 x 13 pan - layer in order
spread on 1 (8 oz.) pkg. cream cheese,
2 cups (approx) chile
sprinkle with some chopped scallions (or leave out if you don't like them)
top off with a layer of cheese, can buy mexican blend, or use a combination monterey jack (with or without jalapenos) and cheddar, ( I wouldn't use mozzerella, too stringy)
Heat in a 350 oven until hot and cheese is melted
Then if you like, sprinkle on top a few (or a lot) sliced black olives

Serve with scoops or your favorite chip...guac goes nicely as well!

Chili beans are nothing more than pinto beans with chili powder added during the canning process. Ranch beans is another version. Plain pinto beans work fine as well as any bean of your choice. The soup is so versatile in that regard. It is simply modifying it to suit your individul taste.
Hormel makes the tamales. They are normally found in the canned meats section, i.e. chili, tuna, vienna sausage, and of course Spam. You might also check the speciality foods section of your supermarket where the mexican foods are shelved.
You can also used the frozen tamales as well. Experiment and enjoy.
 
I just used light red kidney beans since that is what I had in my pantry.
The guys at the shop finished off my Tamale Soup today for lunch.
So I am searching for supper suggestions.
Quick, easy and prepared for 1.
I hate eating alone. ummm
