Hey Scrambled

Ya'll just come on down. The more the merrier. We don't need chairs. We'll just gather up at the picnic table under the oak tree in the back yard. I'll open a keg of nails and we'll just set around and chew the fat, down home style. Weather was so pretty today but a tad bit warm. Would have made for a good picnic.

Ahh, just as I thought, it also sounded like an unusual dessert to me as well!
 
I"m going to make fish "chowda" and with it I usually make cornbread...out of a package...so might anyone have a good recipe for cornbread, not the REAL sweet kind, but I do like a little bit! I think that corn casserole needs to wait for a full course dinner!!!

I have a recipe...use this quite a bit...
For us, and all those that I know, we believe breads are not sweet, unless they are desserts! ...LOL (The sugar in this is just to ease the meal flavor, it is not sweet.)
I only like Yellow Corn Meal.
I also use this recipe to make cornbreaed flitters, just thin it down with a little more milk.

1 cup flour (self-rising, I love W R flour)
1 cup cornmeal
1/4 cup sugar
3 tsp baking powder
1 egg
1/2 tsp salt
1 cup milk
1/4 cup shortening

Preheat oven to 425* Blend flour, cornmeal, sugar, powder, salt. Mix well. Add shortening, blend well. Add other ingredients, mix.
Pour mixture into pre-greased, warming pans.

*Hint I always cook mine in a cast iron skillet, I set my skillet on the stove, pour in grease (bacon grease if you have it), heat and then pour in the mixture....leave on the heat for just a minute, this gets your bottom crusty...which I love.
Coat with butter (real butter, not margarine) when fresh out of the oven.
We use cornbread muffins for different things as well, like our "Poor Boy Supper", it makes a nice presentation for large amounts of cornbread...grease your muffin pans. Set them near the stove to warm. (Watch your grease)
If you want more of a 'cake' like form, use 2 eggs, I light my cornbread light & crusty so I only use the 1 egg.

Going to let the mexican rest. here do it for me....
Will do a light supper.
Don't know what yet...probally 'my' soup, I've got left-over black-eyed peas....uhmmm, yup, soup goes a long ways....
of course will serve it with hot cornbread...
dessert...I don't know yet, hmmmm....

Flitters or Fritters....I've heard them called both ways...
You fry them like pancakes...in a hot, greasy skillet....yes, cast iron...it just cooks breads very well.
Flip them when you get a medium brown color, (your choice on cooked quality)
Serve them with whatever your fixing...they are just a change instead of cornbread. Also, I love flitters with my soups.
Something about the tomatoes, it mixes well with the flavor of the cornbread....
Uhmm can't wait for spring....ready for some fresh fried tomatoes!!

Our temps are the same Deb, lovin it too!! We had pancakes and sasage for breakfast and will have crockpot peas and a roast for supper...easy food, lol! Love those western omelettes, sounds really good!!

If you do a google search there are many recipes for fried avocado. The stuffings vary from chick, crab, cheese, beans, rice, etc. I did a breadcrumb with chicken one back in the summer. It was good but it is tricky since they get mushy easy.
 
We are having Chicken and veggie stir fry over Jasmine Rice. I might make a cake if I have the energy. I just turned over 1/3rd of my garden with a shovel and now my wimpy arms are all well.....wimpyier.
