awww man,,, i MISS good zukes,,, down here we have to buy them ( wifers FINALLY learned to make zuke relish) and what we get here is bout 6" long ,, and maybe 2" thick

had the missionaries over for supper ~ sooo.....curry chicken with rice, broccoli, and curry sauce. Oh, and fresh peaches over cornbread, topped with whipping cream.

Curry chicken has fresh ginger, garlic, & green onions, then ghee, soy sauce ( has to be Aloha Shoyu, best soy sauce EVER MADE), sesame oil, peanut oil, dill weed, curry powder, a touch of poultry seasoning, & a touch of marjoram. I also use RealSalt (it's a sea salt that has the most heavenly flavor, makes everything else taste better too, sorta like MSG, but without all the ugly side effects.)
Once the chicken is fully cooked, take it out of the pan, turn off the heat, and make a roux ( just hot water & flour, beat till the lumps are out), add that back into the pan with all the drippings & such that's left, and stir till it's mixed in nicely. Add some more water & soy sauce, then turn the heat back on, and stir till you have gravy.

For the rice, I like to add chicken soup base to the water before it starts to boil, before you add the rice. Makes for tasty rice.

For the cornbread, I just use a basic cornbread recipe, then add sugar, cinnamon, nutmeg, & Mexican vanilla. When it's done cooking, & still piping hot, I get a stick of real butter, and go over the top with it. Keeps the cornbread from ever getting hard & dry. (Well, and the sugar does that as well.)

We had Oyako tonight, Japanese comfort food. I poach paper thin slivers of chicken breast, scallions, shiitaki mushrooms and cabbage in water with soy sauce and sugar. I heap cooked rice in a soup bowl, form a small depression in the rice and crack an egg into it. Spoon the hot "soup" over the egg to cook it some and serve garnished with fresh scallions.
 
Did everyone stop cooking ? Or did my dinner last night scare everyone away?

It was chicken 'n dumplin's tonight. Biscuits and an apple crisp with vanilla ice cream for dessert.

Tomorrow is supposed to be cool and rainy, and I've got both the furnace people and the water company coming in the morning, so I think I'll follow redfeathers' lead and make some split pea soup and cornbread.
 
JIM!!! You can't be in Texas and never had a cat-head biscuit!!!!! They are biscuits that are light and fluffy and big as a cat head! YUMMY!!!!!

Go find a go ol' mom and pop diner and order biscuits and gravy and I bet you will get a cat-head biscuit!

If not........I am sure someone here who is capable of cooking them will post the recipe...........sadly mine just turn out like really big hockey pucks or well......cat-head........ummmmmmmmm.......well.........roadkill.......

And our dinner tonight was corn on the cob, steak, mashed taters and mixed fresh fruit salad

How was the apple crisp and vanilla ice cream? I made that the other day. Perfect for this time of the year! I think the fall is my favorite time of the year!

It has been a busy weekend. On Saturday I had some prep work and a meeting for the church garden, then church, played around on the computer much later than I should have, got up early and hubby and I did chores all day. He painted the kitchen ceiling and started a reroofing project on the chicken coop. I did 6 loads of laundry, cleaned the shower, both bathroom floors, swept the entire laminate portion of the house and cleaned all the floors, helped with the chicken coop, swept the porch, pestered the children to clean up their rooms

and have just now sat down to rest. (one more load of laundry to fold).

So, needless to say tonight was clean out the fridge leftovers. I was too pooped to cook!
