Aneesa's Muse - One of the things I really like having on hand is a bag of frozen grilled chicken strips. Grill up a bunch of chicken breasts and slice them into strips. Lay them on a baking sheet and freeze them. Once frozen, place them into a ziplock freezer bag. Some uses: pull out a handful, defrost, and serve over salad greens and whatever salad veggies you enjoy. Saute some peppers and onions, toss in the chicken and season. Depending on how they're seasoned, they'd be good on a crusty baguette or served as fajitas in tortillas. You can saute some veggies, add the chicken and a white sauce and serve it over pasta. Or, if you prefer something different, you could toss the fresh breasts in your crockpot with some BBQ sauce, shred them, and serve them like pulled pork sandwiches.
As for us, tonight is
Round Three in the
Great Steak-Fest, the whopping big tray of steaks I bought for about $11.
Remember the grilled steak from Monday night? The leftovers from that will be sliced up and served as a part of a grilled steak, onion, tomato, and blue cheese salad.
After tonight's supper, the servings count should be at 13, which puts us at 85 cents per serving, with more leftovers yet to come!
