Roast Chicken
Mashed Red Potatoes (skins on) – from the garden
Carrots – Cooked in Maple Syrup – from the garden
Gravy – stock from chicken, onions from the garden
Sliced tomatoes - from the garden
String Beans – yep, from the garden
And for desert, peaches picked this summer from a orchard and frozen

Our youngest daughter is home from college for less then a week :eek:

I concocted something from leftovers that will pass for chili! Cornbread with honey and butter will help convince my family thats what it is! I had no meat but leftover spagetti sauce with burger in it. I put that in the slowcooker with a can of chili ready diced tomatoes, 1 can of white beans and 1 can of red beans. A little jalepeno juice. Added extra garlic, onion and chili powder. Let it simmer. They will never recognize it as 2 day old spagetti!
 
I took out a whole chicken, so it could be roasted with some veggies and sweet potatoes, greens, etc. ...or.. I might feel energetic and make some biryani (spicy middle eastern rice dish.. with peppers, onions, garlic, carrots, taters, tomatoes, lots of spices ..all simmered/steamed with basmati rice) ..and fresh naan, salad, etc.

Right now, it looks like roasted chicken, though

I decided midday to throw together a Split Pea and Lentil stew in my crockpot. It's easy, cheap, non-fat and yummy. I'll toss together a salad and, if the kids don't need extra help with their homework, then perhaps I'll make some sort of bread or rolls to go with it.

...and if you ask the other people that benefit from our menu planning, they are no help! "Surprise me, honey... "

Why do they really think we ask?? It's not out of consideration on a large scale ..it's more out of being burnt out on coming up with a new menu every single day...

I totally know where you are all coming from. I ask and I get, well what ever you want! Trust me if I knew what to do, you wouldn't get a choice!!

Just a thought for those who hate meal planning.......

Sometimes it helps to just keep it basic. Monday is chicken, Tuesday is hamburger, Wednesday is pasta, for example. You can keep the meal as simple or fancy as you want, depending on mood, finances and tastes.

Once a week, throw in a family member's personal favorite, a new recipe, or something you haven't made in "a million" years.

Just an idea from one who had to create a weekly menu for a living.
