Tonight we're having teriyaki chicken breasts and veggies (broccoli, carrots, zucchini, snow peas, etc) over rice.
 
I got ALL my mending done, made several t-shirt bags and cut out 32 napkins from muslin to make Christmas presents with. After I finish this, I need to go out and rip up my garden, I lost about half of it to frost last weekend.(no surprise)

Firecracker Casserole

2lbs.hamburger
1med.onion, chopped
15oz.can black beans, rinsed and drained(sometimes I make my own)
1-2T.chili powder
2-3t.cumin
1/2t salt
4 flour tortillas
1 can cr. shroom soup, undiluted
10oz.can rotel tomatoes and chilis, undrained
shredded cheese

In skillet cook beef and onion until meat is done, drain. Add beans, chili powder , cumin and salt. Put into a greased 13x9x2 baking dish. Arrange tortillas over top. Mix soupand tomatoes, pour over tortillas. Sprinkle with cheese. Bake uncovered 350* for 25-30min. Serves 8


Potluck pockets

1lb.hamburger
2T.worcestershire sauce
1t.cumin
2med tomatoes,diced
1/2C.onion, chopped
2T. soy sauce
1/2t.italian seasoning
1/2C. gr. pepper, chopped
2t. garlic powder
6 pitas, halved
3C. shredded lettuce

Sauce:
1/2C. soy sauce
2T. worcestershire sauce
1/2t.garlic powder
1/4C. vinegar
1/2t. onion powder
1/2t.italian seasoning
pepper

In skillet, brown beef, onion, gr. pepper, drain. Add worc., soy, garlic, cumin, it. seasoning, mix well. Simmer 5-10min.
In small pan bring sauce ing. to a boil. reduce heat, simmer 5-10min. Spoon meat into pitas, top with sauce, tomatoes, lettuce.

So tonight we had a Mediteranean mixed salad (romaine, radicchio, oil cured olives, red onions, tomatoes and Parmesan shavings tossed in evoo and aged balsamic) with crusty homebaked olive oil bread. Fresh pear slices for dessert.
 
I hurt my back working in my garden yesterday so we had ham steaks, mashed potatoes and corn for dinner. Tonight will be baked mushroom chicken.

The last hamburger recipes(I have tons more though)

Beef Storganoff Sandwich

2lbs.hamburger
1/2C. chopped onion
1t.salt
1/2t.garlic powder
1/2t.pepper
1 loaf french bread
butter, softened
2C. sr. cream
2 tomatoes, seeded and diced
1 lg. gr. pepper, diced
3C. shredded cheedar cheese

In skillet brown beef and onion, drain. Add salt, garlic powder and pepper. Cut bread lengthwise in half, butter both halves and put on baking sheets. Remove meat from heat and stir in sr. cream. Spoon onto bread halves. Sprinkle with tomatoes, gr. peppers and cheese. Bake 350* for 20min. or until cheese is melted(bake longer for crispy bread).
slice and serve, 8-10 servings.


Cheeseburger soup

1/2lb. hamburger
3/4C.onion
3/4C.shredded carrot
3/4C.celery
1/4C. flour
1 1/2C. milk
1/4-1/2t.pepper
1t.basil
1t.parsley
4T.butter, divided
3C.chicken broth
4C. diced, peeled potatoes
8oz. velveeta
3/4t.salt
1/4C. sr. cream

Brown beef, drain, set aside. Saute onion, carrots, celery, basil, and parsley in 1T. butter until tender. Add broth, potatoes, and beef, bring to boil. Reduce heat, cover, simmer 10-12min., until potatoes are tender.
In small pan melt rest of butter. Add flour, cook and stir 3-5min. or until bubbly. Add to soup, bring to boil. Cook and stir 2 min. Reduce to low. Add cheese, milk, salt, pepper. Cook until cheese melts. Remove from heat. Blend in sr. cream.

Sometimes I will add chopped gr. pepper and jalapenos, or change the broth to beef.


Thyme for meatball soup

1 egg
1/4C. breadcrumbs
2T.thyme
1/2t.salt
1 1/2lbs hamburger
1 small onion, chopped
2 med.carrots,chopped
3/4lb. mushrooms, sliced
1T. oil
1 !/4lbs.red potatoes, cubed
29oz. beef broth
1 14 1/2oz can stewed tomatoes

In a bowl mix egg, breadcrumbs, half the thyme and salt. Mix in beef. Shape into 1" balls. In a soup pot, brown meatballs, drain, set aside.
In the same pot, saute onion, carrots and shrooms in oil until onion is tender. Stir in potatoes, broth, tomatoes, meatballs and rest of thyme. Bring to a boil, reduce heat, cover, simmer 25-30min. or until potatoes are tender. serves 12


Debi- If you don't have an ingredient for a recipe, try substituting something you do have. I am like the queen of substitutions and pantry concoctions. I look in my cupboards, fridge, freezer and throw stuff together.

Is there a decent substitue for sour cream? Soy sauce? Um, Worchesteshire. Garlic I have.... I am like old mother hubbard right now. My cupboards are bare. I will take the advice though and come up with SOMEHTING!

I lost my plants to frost early this year.
 
The virus going around here hit me full force this morning. Fever, sore throat, cough and body aches.

My sympathies!

I'm sick with something too! It went to my lungs of course ... can hardly get enough oxygen.

DH is bringing home Super Nachos from the Mexican restaurant.​

I had a meatloaf in te freezer so I took it out and covered it with some cabbage i picked today and poured homemade tomato sauce over it and made faux cabbage rolls. lol...then I put it in the frige and went out for dinner....

Hope you guys with the bug are feeling much better soon!! I had that darn thing ..still have a touch, as I am still experiencing the shortness of breath... a week or so ago. Lots of water ..less sweet anything, and cut back on the dairy ...the mucous will move easier. It's a good thing, trust me.
