PW- I was going to suggest shepards pie also. A chang from burgers and tacos that we like are navajo tacos; basically chili beans with hamburger and onions, regular taco fillings otherwise all on indian fry bread, fold them in half or eat with fork and knife.

We are having left-over pork chops, rice, corn and I think I'll make cornbread. All the talk of cornbread has been making my mouth drool, I don't make it enough anymore. Does anyone have a REAL good recipe for cornbread? I love trying new ones.

Dinner tonight comes from Kraft magazine. I got pretty sick 2 years ago and my DH had to do all the cooking and other chores as well! He works ALOT so he needed easy meals.

No amounts, just directions....but it's easy

Chicken Packets
Foil sheets about 18" long, spray with pan release
The origional recipe calls for making up instant brown rice, but I just take the time and cook up real brown rice...so enough to feed "your family"
Divide the cooked rice in the center of each piece of foil
Lay on top one boneless & skinless chicken breast, season with cayanne, salt, garlic, what ever seasonings make you happy
Lay (balance) broccoli florets on top of breasts
Sprinkle grated cheddar cheese on top of broccoli maybe 3 tbsp. per
Squiggle ranch dressing on top, between 3 & 4 tbsp per packet
Fold up packet, bake in the oven at 375 about 35 minutes (or stick in the frig and cook later!)

You could use white rice, but brown is better for you and it actually tastes pretty good, my kids love it!
 
Thus, your name! I've never tried scrambled egg sandwiches, but I LOVE fried egg sandwiches with lots of mustard and onions. Yum!

LOL!! Only my friends would try that, my family is not that brave or adventurous, lol!! When I was 18 I went through an 18 month Licensed Practical Nursing Program and lived in the dorm of an old hospital. Nursing students work all the shifts nobady with a real life wants so when I would get off duty I would head to the little cafeteria and this big ole woman that worked there worried about my eating all the time (most of my life I weighed under 110 pounds, now about 30 more than that, so she could quit worrying now, lol!) but anyway, she knew I wouldn't eat mayonnaise (do now) so she would make me scrambled egg sandwiches smothered in mustard and I loved them...that is still my very favorite comfort food today 32 years later!!!! Soooo, happy to share my quirky comfort food with my pals!!

Thanks for all the great ideas....sometimes mealtime gets 'old'...
I found out about 4 hours ago, that my husband had plans...(he had told me...I just forgot) so he's on an appointment, (Catfish Buffet) with a church member...deep discussions....;/ and I wound up fixing my mexican casserole, w/ ground chuck, salad, and buttered toast....
I will serve them leftovers for lunch!

I make shepards pie many different ways, but one of my favorite quick and easy ones is:

Mix sliced mushrooms and beef gravy, sliced carrots and hamburger. Top with mashed potatoes, dot with butter.

I also make it using any other type of meat(beef, chicken, pork, lamb) and any veggie.

I have A LOT of casseroles and different entrees using hamburger. If anyone ever needs an idea email or pm me.

This one is simple...I usually fix it with chicken...but have opted out for ground chuck multiple times....different, but a great taste.

Mexican Dorito Casserole

1 boiled and deboned chicken (or 2 lb ground chuck, browned & drained)
1 can rotel
1 can cream of mushroom
1 can cream of chicken
1 large bag doritos
1 cup chicken broth
1 8 oz tub of sour cream
salt & pepper to taste
1 bag shredded cheese


Preheat oven to 400*. Cook chicken, pull into pieces. Spray pam on casserole pan...crush chips into bottom, mix above ingredients, except for cheese.
Heat in a sauce pan till bubbly; pour onto crushed chips....top with cheese...cook in oven till cheese melts...and is slightly brown. Enjoy.
If using ground chuck...brown, drain, then follow directions as above.

She has exquisite taste, but never really learned how to do it herself. Let me say that she came up with some, uh, *interesting* things over the years! I like to joke that I learned how to cook out of self-defense!

But, my grandmothers and dad taught me some really interesting things over the years and the fried egg sandwiches were a part of that. No one in my family are picky eaters, even my kids. The great fun in that is that they don't mind me experimenting from time to time.
