It was actually not too runny of a recipe, and I put it in the fridge for awhile (just getting back to read your post) I had actually thought about the freezer for a bit, but it worked out okay. It was a bit soft in the center, but not terrible.

And my roast in the oven actually turned out really tender!

Tonight is meatloaf...I do make a mean meatloaf....haven't decided on the sides yet....

It's easy-on-Amy day today....TACOS!!

I'm sick of the same old stuff. Seem to have gotten into a rut with the cooking. It's over 80 degrees here, so that pretty much knocks out gumbo, chili, soup, stuff like that. I need some "summery" suppers. All the stuff I've read on "seasonal dinners" are always "rabbit food". A tiny piece of lettuce, maybe some sort of tiny portion of noodles, whatever. I can't live on that!!! I'm from the South, I need REAL FOOD!!
 
Broiled sockeye salmon with sour cream and dill. It takes 5-6 minutes under the broiler. Its 80 and humid here, and I hate cooking when its hot. Salmon, salad, whole wheat cous cous (also only 5 minutes) and maybe some blueberry smoothies for dessert.
 
Made some yummy turkey noodle soup from a turkey carcass leftover from Easter. Cooked it in chicken broth with carrots, celery, onions and a garlic clove. I used Amish Kluski noodles and added back the bits of turkey after removing the bones. Let me tell you, that's a cure for what ails you. I've had a sinus headache all day and the soup is the only thing that helped it.

Anyway, I was thinking I might do some crawfish etoufee before it gets too out of season. Haven't had that in a while, but I still consider that to be a "winter" dish.
 
Since all I have eaten this week is pimento and cheese sandwiches. I broke down tonight and cooked a hot dog - wow - yippee
I need to stop long enough to cook something good.
Or, either just get in my car and drive Yogi's house, he always has good food.
Or I am open to invitations from anyone else.

Ya' just gotta slow down and quit working so hard. But yeah, hop in the car and come on down. You might as well stop in Alec and pick up amystours and crew. Sounds like she has kitchen burn out or something.
She probably needs a pot of mustard greens and a pone of cornbread with some home fried chicken. What cha' think?​
 
Ya'll come visit me...I'll fry up whatever the gardens giving...uhmmm I had greens today!
Hey Yogi- I still want your gumbo recipe....I made red beans & rice to go with my meatloaf last night...was wishing for gumbo...
