To tell you the truth, I would be hard pressed to write a recipe for my gumbo and potato salad. I know you can appreciate this. There are some things that you just make and no recipe. But I will make an honest effort to put one together just for you.
Gumbo to me is something that you start and then you build upon it, if that makes any sense to you. My gumbo is closer to a stew and not like a pot of dirty dish water. Can't stand that mess. It's gotta have some substance for me so that it sticks to the ribs.
