I contend that all one needs to make a gumbo is:
1 cup of flour
1 cup of veg. oil
2 gal. of water
2 rocks

Now don't get me wrong. I like gumbo. But there is gumbo and then there is what is called gumbo. Folks say that I make a mean gumbo. And then there's all that rave about my potato salad. Oh yeah, you can't eat gumbo without potato salad. That's a mortal sin, ya know!
To tell you the truth, I would be hard pressed to write a recipe for my gumbo and potato salad. I know you can appreciate this. There are some things that you just make and no recipe. But I will make an honest effort to put one together just for you.
Gumbo to me is something that you start and then you build upon it, if that makes any sense to you. My gumbo is closer to a stew and not like a pot of dirty dish water. Can't stand that mess. It's gotta have some substance for me so that it sticks to the ribs.

Okay, so dream, when we goin? I'm ready!!! However, I know EXACTLY what you mean! I'm back in college (1 year left, yay!), and working all the time, go pick up the kids, tend to all the animals, visit with hubby so he doesn't feel left out, and by then, it's LATE!!

I'm thinking I may just have to sit down and PLAN out a menu. Know that sounds corny, but it seems to work for me. Could even make some ahead of time. Soups and gumbos are always better the next day anyway!!!

Yogi, when exactly was it you were frying that chicken??? I make such a mess. Seems I can't do anything with flour without strewing it from one end of the kitchen to the other!

If I was feeding the preacher it would have to be Sunday for fried chicken. Other wise, fried chicken can happen any day, any time.
Hey, a good cook is gonna make a mess of things in the kitchen. If they don't it probably ain't fit to eat. Besides, the pets have got to have something to lap up off the floor.
What cha' majoring in college? Sounds as if you have a full plate with all that's going on in your life.​
 
Amy - wish I had time for a trip to Yogis. But I am guessing those invites he throws out there are a lot like Ms Prissys. You have to work for your supper. LOL
What I need is a vacation not a different work location. Sounds like you could use one of those vacation things (not sure I remember exactly what one is like myself).
Maybe we can all meet at Parsons house. Cause I KNOW Yogi needs some time off from work.
Wonder if she will make us work for our supper?
 
I hardly ever do it the same way twice... tonight its ground beef with Italian bread crumbs, two beaten eggs, white rice, onions, garlic, seasoning salt, pepper. Kind of like a standard meatball. I put them in the peppers and set them in the crock pot with tomato sauce and some tomatoe paste, more pepper and italian seasoning on top.

I'd rather have chinese take out though!!! it's my favorite.
 
Dang, y'all are readin' my mind tonight! We are having stuffed bell peppers as well!

I just use the green ones. I use ground beef, rice, and then I cheat a bit and dump in a jug of the Savoie's dressing mix. I fill the peppers with that, then top them off with tomato sauce, put a bit of water in the bottom of the pan to steam the peppers, and bake for a while. They are good, and it's pretty fast prep, but baking takes a while.
 
Well, I knew it was coming sooner or later. Yep, Brandigirl went a got a craving for them dang crawfish ( crayfish, crawdads) ! So tonight she had:
Boiled crawfish
Boiled Corn on the cob and potatoes
Dip

Now the house smells like a fish market! And then there's the part where she'll spend the next two days walking backwards with both hands up in the air like a crawfish.
Think I'll just make me a peanut butter sandwich and glass of sweet milk and call it good enough.

Gotta love Chinese, but your dinner sounds yummy as well!

I usually cook them all day, at least 8 hours, the first three on high and then the remaining time on low. It's a good dinner to come home to after being away all day, just start them on low though so they don't burn.
