Tut, like Yogi said, we did need the rain, I just think that it would have been sufficient WITHOUT all the wind and thunder that accompanied it!! I'm a wuss, scared of the thunder and lightning...

Anyway, it's been a little warm and humid here, but I'm enjoying this weather, knowing the worst is yet to come...lol

Souplantation is the same company as Sweet Tomatoes. It's a soup and salad place and when it's hot outside, a pile of salad in an air conditioned place is the way to go!

Let me play with the recipe some more and then I'll post it if anyone's interested. Now I have to figure out what's for dinner tonight. I'm thinking stir fried chicken, asparagus and almonds over rice. Pretty quick and easy and won't heat up the kitchen too much. We're in for another hot one.

I'm sorry to have been MIA here, but boy was this a hot and busy weekend. Ever seen people move a pick-up full of compost, by 5 gal. buckets, over 100', in the heat? Not pretty!

But, we had a dinner I enjoy tonight:

Before dinner:

Pimiento Stuffed Celery w/ Olive Slices
V-8

Dinner:

Melon Bowls

Smothered Barbequed Chicken
Mashed Potatoes
Biscuits
Buttered Baby Carrots

For melon bowls, cut cantaloupes and honeydews in half. Remove seeds and scoop out contents with melon baller. Take 1/2 cantaloupe, now empty, per person, and refill with 1/2 cantaloupe balls, and 1/2 honey dew balls. I think the 2 colors look pretty together. Serve chilled at the beginning of the meal. I know that it's said that you should eat melon alone, but this was something my grandmother served every Sunday dinner, once in season, and we are okay.

For the chicken, I make a bowl of homemade barbeque sauce....and I do love the stuff

, layer the chicken (Either skinned legs, or wide, skinless, chicken breast strips.) in a baking dish with slices of fresh ginger, then pour the sauce over it. Bake.

I make the carrots as I do fresh green beans, sans the lemon juice. Cook, drain, put back in the pot over low heat to dry. Add a little butter and cook for a few minutes. Serve. With green beans I put lemon juice and butter in the pot with them once they are dried on the heat.

I mashed the last of the chives I salvaged before the heat, from the garden, into the mashed potatoes, and added a little parmesan, as I just had a small piece left. I'd kind of eaten a few curls from it one of the hot days I didn't feel much like eating....with crackers.

While I don't always succeed, I try very hard to make Sunday dinners special, and complete, no matter what we do during the week. And, usually, we have chicken. Growing up we had Sunday dinners at my grandparent's home for years, and I have always considered it special family time.

I hope it's cooling for everyone affected by the heatwave, and drying for everyone who's getting more rain than they need!
 
Mmmm. Tutter's dinner sounds yummy!



Tonight's dinner will be:

Steamed artichokes with various dipping sauces
(appetizer while the rest is grilling)

Marinated and grilled ahi tuna
Quinoa pilaf
Grilled butternut squash with herbs
 
Last night I made McDLTs (but with turkey burgers)

Remember back in the day when McDonalds had McDLT?
"Keep the hot side hot, and the cold side cold"

First, toast the buns

The cold side:
on the bottom bun put a small squirt of mustard
about 1 tsp catsup
1 tbsp chopped onions
about 1/4 cup chopped lettuce
1 tbsp mayonase
cheese slice
two tomato slices

(it's easier to spread the mayo on the cheese than the lettuce)

the hot side is the bun top and meat.

The cool thing is once the meat is cooked and on the bun top you can wrap it in foil and keep warm in the oven and keep the cold side in the fridge until time to eat.

I made tater tots also so the oven was still had enough heat to keep everything warm until dinner (about 25 min)

McDonalds traded McDLT for the McLean Delux in the 80's because some people didn't like touching the "hot" side to assemble the burger....but then they'd pick the thing up with their bare hands to eat it.....go figure.

What a difference a day makes! After all that heat the last couple of days, it's drizzly and in the mid-60s here today.

I'm baking some turkey meatballs, then will toss them with some leftover spaghetti sauce and put it all in the crockpot to keep warm. These will be served as meatball sandwiches in a French baguette with a sprinkling of mozzarella cheese. If it stays on the cool side for the rest of the day, I'll serve that with a green salad. If it warms up a bit, then it'll be a fruit salad.

Tonight we're having leftover spaghetti with fresh Italian bread. But this weekend the whole fam damily is coming in to feed at the trough! And for them the weekend starts Thursday! Take a look at my menu and tell me if it looks good or not. Pretty please?

THURSDAY

Jambalaya w/andouille, chicken and ham
Tossed salad
Crusty Italian bread
Ice cream for dessert

FRIDAY

Pinto beans
Kielbasa
Cole slaw
Turnip greens
Corn bread
They're not getting any dessert. We'll be too stuffed anyway!

SATURDAY

Smoked pork shoulder for pulled pork
Greek-style grilled chicken breasts
Greek Picnic Salad
Broccoli Salad
Baked potatoes
Brownie Sundaes


SUNDAY

Thank God, they're going home!
