Backyard Buddies - that sounds like something I make, too. I call it my Easy Delicious Cake (it was originally called a Dump Cake, but didn't sound to appealing)
1 yellow cake mix
1 stick butter
2 cans cherry pie filling
1 large can crushed pineapple
Heat oven to 350. Into a 9x13 pan, pour in the two cans of cherry pie filling. Pour the can of crushed pineapple (do not drain) over that. Sprinkle cake mix over top. Cut the butter into small pieces and sprinkle over the top of the cake mix. Bake for 50-60 minutes until top is browned. I always have the supplies for this on hand for a last-minute dessert or when unexpected guests drop by.
Tutter - that peach upside down cake sounds great! Going to have to try that.
For tonight:
BBQ rib-eye steaks with mushroom wine sauce
Warm potato salad
BBQ corn on the cob
Green salad
Was thinking creme brulee for dessert, but so cold may end up making the cake above (or if I get to the store, Tutter's cake!)

Too Weird!!! I DID make green Beans!

Today we will probably BBQ outside (Steaks & Chicken, maybe some salmon) for the Holiday and have the Family over. My two Oldest girls are home for the weekend. Will have the rest of the kids here and Pot Luck It. Will let everyone know what they bring.
 
Liz - That sounds great as well - yet another yummy dessert to try! Dump Cake. . . I've heard that phrase but never put two and two together. Thanks for pointing me that direction.

I love homemade creme brulee. It has been a while since I've made it and since we didn't have our chickens then with their delicious eggs, so I'm sure yours is even better! Yummy!

Haven't yet decided what I'm making for dinner. It'll probably involve either chicken breasts or kielbassa since I have both in the freezer.

I decided to make a BBQ chicken breast recipe this evening. I got the recipe from a friend, who copied a restaurant recipe. There are no measurements, but here it is:

In a bowl, combine:
Several pieces of bacon, diced and browned.
Several tomatoes that have been diced into fairly small pieces, removing and discarding seeds and juice.
Several green onions - sliced.
Large handful or two of grated cheddar cheese - enough that looks like it will bind the mixture together when cooked.
(set aside)

Marinate boneless, skinless chicken breasts in teriyaki sauce for at least an hour, more is better.
Grill until nearly done.
Brush chicken with your favorite BBQ sauce. Turn, and brush other side. Repeat a couple of times until a good coating is on the chicken.
Top with a large mound of the tomato mixture and continue grilling until cheese is melted.

I'm serving that with a brown/wild rice mixture and green beans.

It's actually on the chilly/gloomy side today. No rain yet, but it's a possibility. So, rather than the warm weather meal I was planning, we're having spaghetti tonight. I still have lots of salad ingredients growing, despite the previous heat, for a green salad with it, and garlic toast.

That is a very unusual chicken recipe, and sounds delicious! I'll have to get out a notebook for keeping track of all these good idea!

My husband loves brown rice-wild rice! I also saute pieces of portobello mushrooms, in olive oil, and when I put the rice on, I add them to it.

Yes, Tutter, the recipe is a bit different, but it's really good! I took a picture of it, so if I can remember to do so, I'll post it.

I completely agree about the mushrooms! So yummy. Unfortunately, my daughter hates mushrooms with a passion so we keep them limited. Maybe I could saute some and add them at the end?? Thankfully, mushrooms are about the only thing she won't eat.

I'm feeling very unmotivated about dinner right now. I've got a sore throat at the moment and the thought of cooking isn't exactly inspiring me with any good ideas.

Does anyone have any ideas for a quick meal I could toss together? I have all kinds of things in the pantry - pasta, rice, quinoa, etc. I also have some things in the freezer - chicken breasts (but we had that yesterday), tilapia, salmon patties, hamburger, kielbasa & smoked sausage.
 
I am making a casserole with kind of like spanish rice and I'll put whole keilbasa on top. Bake in oven for 45min.-1 hour, I'll probably put corn in the rice also.
I have been waiting for it to rain all day. We had a high of 57*, we are expecting thunder showers tonite and tomorrow.

OK, I finally worked through this sore throat to motivate myself to come up with dinner. I'm making tortellini soup - no recipe, just winging it.

I chopped onion and garlic and sauteed it in a bit of olive oil. I opened 2 - 32 oz containers of chicken broth, 2 - 14.5 oz cans of diced tomatoes and juice, some dried herbs and a splash of red wine and dumped it all in the pot where I sauteed the onion/garlic. In another pot I'm boiling up some pesto tortellini. I'm going to toss the cooked tortellini and some frozen chopped spinach into the chicken broth base and will top it with a sprinkling of parmesan cheese. Served with French bread.

Who knows how it will taste, but it was easy to make!
