It's Sunday, so we're having:

Deviled Eggs
Tomato Juice

Cantaloupe and Honey Dew Balls in 1/2 cantaloupe shells.

Chicken Fried Chicken
Mashed Potatoes
Gravy
Buttered Baby Carrots
Asparagus

Apple-Chocolate Chip-Cardamom Cake

Is everyone in Northern California okay?

For anyone who doesn't know, we had a freak thunderstorm move through. (Freak for my area, anyway.)

The lightning has begun over 400 fires, over 100 are in my county. They California National Guard's here helping out, but the smoke is terrible, too.

Health and Human Resources issued an advisory to people with breathing problems to stay in for 24-48 hrs, and for people going out to curtail activities. The air quality, especially inland, is terrible from all those fires.

Anyway, just hoping everyone up here is okay.

I'm not entirely sure what I'll be making today. I think I'm going to BBQ some chicken breasts, perhaps make some homemade buns and make sandwiches. It has been unseasonably hot here in So. Cal (breaking 50 year records) so the motivation level is a bit on the low side. But, DD has gone to a friend's for a sleepover, and DH and DS have gone kayaking in Newport. So, I and the chickens have the place to ourselves which is nice and peaceful and quiet!

We are going to have spaghetti , NO bread cause we are trying to be good, and there are enough carbs in the pasta.

I am goin to make a fresh salad. I have a ton of lettuce in the garden.
And no desert cause I am going to be too fat for my kayak if i keep eating goodies.

But i can live vicariously through all the wonderful deserts ya'll make!

cknmom and 2dream.. thanks for the advice on the Mucinex ...I'm going out shortly to pick some up. I saw about 4 varieties yesterday, but wasn't sure about any of 'em and had already exhausted my short bursts of energy to stand there and read each label or chase down a pharmacy clerk

Nice salmon filets for dinner here.. not sure if they'll be grilled or baked.. but I like Italian salad dressing for marinading

Roasted red taters with fresh garlic and parsley out of the garden ...big green salad.. and my Nannie's sweet tea (minus at least ONE cup of sugar)

I layered a pan with refried benas and poured a mixture of browned ground beef with taco sauce (powdered)/chunky salsa & a bit of liquid taco sauce/rice over the beans and topped with a pile of mozzarella cheese ---baking now and will go with tostito scoops and some quacamole....yum!

Chickenmania - I'm so sorry to hear about your collarbone - Youch that must have hurt (and still hurting, I imagine). How did it happen?
Tutter - We managed to avoid the lightening strikes, but boy is it smokey from all the fires they set off higher up. I woke up at 2 a.m. smelling smoke and couldn't get back to sleep for a few hours. This time of year always makes me nervous even though we weedeat like crazy to create a defensible space.
Aneesasmuse - hope you're feeling well soon. Whiskey or Bourbon w/honey and lemon always do it for me - may not cure me, but after a couple shots, I don't care anymore!
We've been working outside most of the day, so a simple dinner of Roasted Shrimp w/Orzo salad, some chilled asparagus and garlic bread for us tonight. Along with the ever-popular Bananas Foster for dessert.

Yes, the smoke is pretty bad, Lizardz. It's very acrid here. I get jumpy, because the upper portion of the property, where my house is, is forest. I bank up to it. We have old growth, and newer.

Unfortunately, things aren't getting better here. There have been evacuations, with instructions in the event you are evacuated on the radio etc., and too many of the 90-some odd fires left in my county alone, have little or no containment.

The problem is that they are too far from roads, so they are looking for extra air support.

One of the fairgrounds is unavailable, due to a world music festival, but another is accepting livestock with people who've evacuated. That's a terrible thought, and I realize that we now need a livestock trailer on the property to ever get the goats, chickens, dogs, cats and cage birds out, should, Goodness forbid, it ever become necessary. I'll have to hope someone has a good conditioned one that they will let go for little.

Anyway, enough of that. You guys had some delicious sounding meals tonight!

Roasted Shrip & Orzo
3/4 lb. orzo
1/2 c. freshly squeezed lemon juice (approx. 3 lemons)
2 lbs. shrimp, peeled & deveined (16-18 count)
1 c. minced scallions, white & green parts
1 c. chopped fresh dill
1 c. chopped fresh flat-leaf parsley
1 cucumber, seeded, med. dice
1/2 c. small-diced red onion
3/4 lb. feta cheese, diced or crumbled
kosher salt
olive oil
black pepper
Preheat oven to 400 degrees
Fill medium pot with water and bring to boil. Add 1 Tbl. salt and a splash of oil, then add orzo. Cook 9-11 minutes, until al dente, stirring occasionally. Drain and pour into a large bowl. Whisk lemon juice, 1/2 cup olive oil, 2 tsp. salt, and 1/2 tsp. pepper. Pour over the hot pasta and stir well.
Meanwhile, place shrimp on a sheet pan and drizzle some olive oil over them. Sprinkle with salt and pepper and toss to coat. Roast for 5-6 minutes, until done.
Add shrimp to the orzo, then add the scallions, dill, parsley, cucumber, onion, 2 tsp. salt and 1 tsp. pepper. Toss well. Add the feta and stir carefully. Let sit at room temperature for one hour to allow flavors to blend or refrigerate overnight-bring to room temperature before serving.

Notes - I did not use anywhere near the amount of olive oil or salt called for and it turned out great. I only used about a 1/4 cup mixed with the lemon juice and it was fine. Also didn't use as much dill as I didn't have that much. When cooking the shrimp, I added in a couple of crushed garlic cloves, which I then minced and added into the general mix at the end. This was really good! The recipe comes from one of the Barefoot Contessa cookbooks. It claims to feed six, but six what I don't know - maybe mice. It fed my husband and myself, with enough left over for my lunch tomorrow. It was really easy to make, too! - Hope you all enjoy.
