Thanks for the input, y'all. It did work out OK. Boring, but tasted all right. The homemade cheese from yesterday helped. I'm just trying to cook with what we have on hand, and it's getting trickier as each day goes by!

I have some dough rising right now to make soft pretzels. Hopefully that'll be a neat change of pace for the family, and my daughter can help shape them. When the larder gets low, it's time to get out the flour! Better yet when you can make stuff out of basically flour, water, and salt and have people act like it's a wonderful snack!

I wrote down the recipe for the street snack served in Haiti, dirt, water, lots of salt.....make into "pies" and bake on the street in the sun for 2 days....(just in case)!
 
Adobo chicken ..rice ...beans ...fresh salsa ...and a few red potatoes cuz I had a taste for taters all the sudden.

I might have to crank out some pretzel dough when it cools off in here, tonight ...and I definitely need to make some fresh Mozz to go with my Olive Loaf..

...making myself hungry again and just finished dinner!

We started doing what needed doing before dawn, to avoid the heat later. Fed and watered critters, watered the gardens, etc. And part of it was cooking.

We'll have leftovers for dinner

but I also decided to bake while it was cool. I made a loaf of bread, a pan of cornbread, and am ready to tackle chocolate chip cookies.

I'm making the cookies because I love to have a cookie with lemonade, and I thawed more of the lemon juice I squeezed over the winter, so that I can make a pitcher for the day.

I'm leaving some bread and cornbread out, but I'm freezing some slices/squares for another day. Of course, I did taste a wee bit of hot baked goodies with butter. After all, quality control; I wouldn't want to feed my family anything inferior!

Aneesasmuse, yes, I know. It's a long peninsula with the Pacific Ocean on one side, and the Sea of Cortez/Gulf of California on the other.

On the gulf side, the water is almost too hot to go into, and will make your skin red. The Pacific side has some very nice beaches. It varies, because it is so long, but there is desert with a lot of nice succulents, pine forests, beaches, and some nice vinyards.

One place I used to eat was a gorgeous building which was hut-like, but made from highly polished bamboo and wood, with thatching. They made alcoholic, or non-alcoholic, drinks in coconut shells and pineapple shells, which were always nice for atmosphere. Mostly I had seafood there, as all of Baja is known for it's great seafood, of course.

They also sell fruit on a stick on many beaches. You can be alone on the beach, and up will wander someone selling mangos on a stick.

well last night we had homemade chicken pot pie from the chicken I had roasted a couple of days ago.
Didn't have to make sides cause it had in it baby onions(hate peeling them but they are so good), peas ,carrots and diced potatoes.

Tonight I think I'll make chicken taco's refried beans and Spanish rice.

Great description of Baja California! I love it down there! There are some spots with amazing condominiums for rent, often owned by Americans, for great prices. We used to go down fairly often and stay in a 2 bedroom, 2 1/2 bath condo with all the amenities, 180 degree ocean view, and a flat roof with a telescope. Because there are few lights, the view of the stars is amazing. For our rural members, that may not sound like a big deal, but us city folk think that's a darn miracle!

Anyway, we haven't been down in about 10 years, but I think it was only $100 a night back then. Split it between 2 couples and you had a very inexpensive vacation. The seafood is the best! Oh, and the carnitas are to die for. I've never, ever had better carnitas as I've had down at a little place in Rosarita.

And, my apologies to our Midwestern members, but I've eaten Mexican food out your way. If you all ever get down to the real Mexico, you're in for a real treat!

I found the recipe here: http://allrecipes.com/Recipe/Cheesy-Eggplant-Bake/Detail.aspx?prop31=1 but I made some alterations. To cut down on the fat, I fried mine in Pam. I didn't peel the eggplant. I also didn't have garlic salt, so I simply substituted garlic and salt to make my own. I used canned tomatoes, but used the already diced tomatoes instead. If you have garden ripe tomatoes, I think that'd make an awesome change in the recipe, especially if you can cut out a bit of the seeds or use a low seed tomato. I also used grated mozz cheese and added a bit of fresh grated parmesan. I WILL be making this one again. We were all making the *yummy sound* (think Young Frankenstein! ha ha) during dinner!
 
Tutter glad to hear from you; keep safe. When we had to evac last year from the day fire unfortunately we had to leave the chickens behind as we had no way to take them with us. Some neighbors stayed behind and luckily the fire turned away.

Thursday DGD and I made oven fried chicken(even though it was very hot inside and out)

1 pkt ranch dressing mix, 1/4C. breadcrumbs; shake rinsed dried chicken, dip in milk, reshake; cook 375* for 50 min.

Last night I made linguini and meatballs and hunts sauce(time to go shopping!!!) I found a great recipe for meatballs;

Italian meatball mix: 2 1/1C. dry breadcrumbs,2/3C.dried minced onion,2/3C.grated parmesean cheese,1/3C.dried parsley flakes,1T.garlic powder,1T.garlic salt; Mix in bowl, store in fridgefor up to 2 months
To make meatballs:in bowl mix 1 egg and 1 b. ground meat and 1C. mix. Mix wellshape into 1 1/2" meatballs. Brown in skillet. Put in baking dish, bake 400* for 20 min.

Tonight will be bbq chicken if the smoke isn't too bad today.

I bbqed chicken last night. I marinated it in homemade lemonade with garlic and onion powder. I fixed a pasta salad with leftover linguini cut up, zucchini diced, black olives halved,green onions cut up,mozzarella chunked, lightly coated with ranch dressing(I'm the only one here that will eat it. dressing or oil and vinegar). DH loved the salad!

Not sure about dinner tonight yet. They are calling for thunder storms and possible flooding. I read that they are getting a handle on the fires; I hope that's correct. Our smoke is still kinda bad as now the fires we are getting most of the smoke from are still going strong(by lake isabella, walker basin area)

I have no idea what will be on the table this evening, but I have to cook something ...I was too icky sick to cook for the last two nights.. blah!


Sending prayers for all the folks so close to the fires! I think of you guys every day ..and especially when I look up in the sky at night and see the "red moon".

We're having stuffed bell peppers. I make the filling by sauteeing meat, onions, spices, adding rice, and then a tomato sauce.

Even though there's rice in it, we have it with mashed potatoes, or have something like French bread. Green beans are the vegetable we like with it. Dessert is raspberry ice cream...it was over 100 today, too hot to bake anything for dessert!

Backyard Bubbies, I've been to Rosarita! When I was really small, maybe 6, my grandmother and I were playing in the surf there, and she got caught in a riptide. I had hold of her arm, even though I had to have been pretty ineffectual, being small, with her being tall. We had the beach to ourselves, but thankfully a local came by and got her out, because we were beginning to lose ground. Whew! I stand corrected....you're right about the carnitas!

Cknmom, I'm so glad the fire turned away, and the chickens were okay!

They are predicting having the fires surrounded by the end of the month, or a little before, and their hope is to have them out by the 2nd week in August. The problem, of course, is keeping them contained. They've made some pretty good headway in the past couple of days, but they've also "lost" a couple of fires which jumped their lines. We still have the same 127 burning today in my county, as we did 3 weeks ago. I'm really hoping the weather cooperates, because that modified Apache came in and is making a difference. I think it holds 2,000 gallons of water/retardant, as compared to the 300 and something of the other large 'copters. I sure hope all of the fires in this state are put out sooner than later! Meanwhile, take care with that smoke, it's brutal.

Those all sound really good! I make a chicken marinade similar to that, and it's wonderful!

The sun's red here, too, when it shows. We haven't really seen the sun in weeks. I have a photo I should post that I took yesterday.
