And here I always just said pullet until they laid an egg, then I would start saying he. And then I would call the boy a cockerel until I saw him do ..the deed...then I would call him a rooster!

I think that is how it's said in the egg industry. Pullets become hens once they lay an egg. Not sure about males. One year has always been the APA/ABA qualification though.
