Ms. Lewis Rich :

Anyone have the recipe for the buttery looking cream candy that melts in your mouth?

I'm not sure if this is the one you were looking for but it is really good. It is home made carmel that melts in your mouth. Got this one from my Dear MIL and so I call it

Dee's Carmel Candy
1 1/2 C whipping cream
1 C eagle Brand Milk
1 C light corn syrup
2 C sugar
1/4 C butter [not margarine]
1 Tbsp Vanilla

Put all but vanilla in a large heavy pan. Cook till it forms a firm ball [244* to 248*] add vanilla and pour into a well buttered 9x 11 cake pan.

Once it starts to get thick keep fire low and stir, it will burn fast. This candy takes a long cooking time.

These are the exact dir. she gave me. Boy she wasnt kidding about the long cooking time. I always put a stool by the stove and get a book to read. When done I cut and wrap individual pieces with waxed paper. If you don't get the temp right or make on a humid day this candy will be really gooey. Enjoy

I think I just gained 5lbs typing this.

This recipe is from Southern Living Cookbook:

Cream Cheese Butter Mints
1 (3 oz) pkg cream cheese, softened
2 tsp. butter flavoring
1/8 tsp. peppermint oil
1 (16 oz.) pkg. powdered sugar, sifted
paste food coloring, optional
cornstarch

Combine first 4 ingredients in a large mixing bowl; beat at low speed with an electric mixer until blended. Add a small amount of food coloring; beat at medium speed until well blended. (Mixture will be dry) Knead mint mixture until smooth.

Press mint mixture into rubber candy molds that hav been lightly dusted with cornstarch. (I made these and used a teaspoonful and rolled into a ball and then flattened a bit.)

Yield: about 4 dozen

ottoman, that is the recipe I use for Latka (sp) potato pancakes. Growing up, one of my step-fathers was Jewish and we had these a lot. We love them and have them often. yum

OK, I LOVE anything with sausage in it. We have a meat processor down the road that makes THE BEST sausage so i use it quite alot during the holidays. Anyway, I do not like sausage balls because they are too dry, but this recipe for sausage muffins is devine!!! You use the little tiny muffin tins and the recipe makes a million of them.

SAUSAGE MUFFINS:

2 1/2 Cups Bisquick
1 can campbells's cheddar cheese soup
1 Lb hot sausage
1/2 can water

Brown sausage, drain, add soup and 1/2 can of water. Add Bisquick, mix well. Bake at 350f for 30 minutes.

EASY AND DELICIOUS!!!!!!

Cream Cheese Butter Mints

Blossom Hen, I LOVE butter mints. Thank you for sharing this recipe.

Can you substitute 2 tsp of melted butter for the butter flavoring?

Probably could. I used the butter flavoring.

I've now found my recipe for:

Cream Candy

1 pint heavy cream
2 cups sugar
1/2 cup light corn syrup
1/2 cup walnuts
1/2 tsp. vanilla

Combine 1/2 pint cream, sugar, and syrup; cook until light brown & creamy. Add remaining cream, a small amount at a time (add slowly in order to keep boiling). Cook until candy forms a firm ball in cold water. Remove from heat; beat well. Add nuts and vanilla. Pour into buttered pan.

Another of my favorite candies is:

Buttermilk Fudge

2 cups sugar 1 tsp. soda
2 Tbsp. light corn syrup 1 tsp. vanilla
1 cup buttermilk 1 cup chopped nuts
2 Tbsp. butter pinch of salt

Combine all ingredients except vanilla, nuts and salt in heavy, deep boiler. Cook, stirring constantly, until mixture forms a soft ball in cold water. Remove from heat; beat until creamy. Add vanilla, nuts and salt. Yield: about 24 servings.

I'm trying to tell myself I do not want to make this candy today. We'll have lots of candy after tonight!

O-go on bulldog-girl. You would like them if ya tried them. I would even cook up the other 3 legs from that Lamb, but then she could only roll around instead of hop.
